Most of the time when I make steak, it gets tough and isn't very juicy, what can I do to make a good tender juicy steak?

Start with a good steak. I like a fairly thick steak....T-bones are excellent, but ribeye, new york strip, or tenderloin steaks are great too. Get a good hot bed of coals going in your grill. Set your steak out and and bring it to room temperature. Season with nothing except salt and pepper. When the fire is burned down to a good hot bed of coals, you simply place your steaks on the grill and stand there and watch them while they cook. I prefer to flip them over only one time...it prevents juices from draining off. The fire may flare up and singe the steak, but that is okay because the steak is not going to be over the fire long enough to do any damage. Depending on thickness of steak, you will flip it over after about 4-8 minutes and then cook on the other side for another 4 or 5 minutes. This is how I like it, but some people will want it cooked a little more, so you will have to experiment with different thicknesses and cook times to find out what you like. It took years of practice for me to be able to simply "know" when the steak is done to perfection. If you like steak, then just keep buying steaks and cooking them until you figure out how you like it best.

Always heat up the pan until it's hot and have the meat at room tempetature. Sear both sides of the meat then you can turn down the heat and cook til your desired tempetature . The best is medium rare to medium. When done cooking always let the meat rest for about ten minutes to keep the juices in . That will keep it moist and juicy.

Buy a good cut of meat...grill it...sear first on each side to lock in the juices. Don't turn it a lot. 5-9 minutes per side depending on thickness of steak and how well done you like it (look that part up on a website or cookbook for exact times per degree of doneness).

It's best to take it out of the fridge/freezer and cook it at room temperature. I like to cook my steaks on a charcoal bbq, seals in the flavor.

add lemon, this is very acidic and will stay in the steak making it juicy.
