how many ships would it take to transport a Marine Expeditionary Brigade and conduct an amphibious landing?

Just a guess, you can move a Marine Battalion Landing Team complete with all the vehicles and a tank platoon and 30 days combat supplies on a Navy Amphibious Squadron.

The Navy Amphib Squadron is going to center around one large deck assault ship (LHA or LHD) and 4 smaller amphibious assault ships.

This includes a Marine Composite Air Wing that looks something like this.... 6 Harrier jump jets, 15 medium lift helicopters, 5 heavy lift helicopters, 6 Cobra attack helicopters.

So, if you want to move an entire Brigade you've got to figure 3 Amphibious Squadrons. 15 ships.
