Orange Chicken Recipe
Ingredients
2 Tbsp peanut oil
1 inch slice of fresh ginger
1 boneless, skinless, chicken breast
1/4c orange juice
1/4c honey
2 Tbsp soy sauce
2 Tbsp cornstarch
3/4 Tbsp dry mustard
1/2 orange
Heat the oil in a wok, and add in the ginger for 1/2 minute. Remove.
Cut chicken breast into small pieces and fry until tender.
Make a sauce with the orange juice, honey, soy sauce, cornstarch and dry mustard.
Add sauce to chicken and stir until thick.
Slice orange into thin wheels and add in.
Remove and serve with rice.

INGREDIENTS:
4 boneless, skinless chicken breast halves, cut into 1-inch cubes
Marinade:
2 tablespoons Chinese rice wine or dry sherry
1 tablespoon cornstarch
Sauce:
1/3 cup orange juice*
2 tablespoons dark soy sauce
1 teaspoon sesame oil
1 teaspoon brown sugar
1/4 teaspoon chile paste
1 clove garlic, minced
1 slice ginger, minced
Oil for stir-frying, as needed
PREPARATION:
Place the cubed chicken in a bowl, and add the marinade ingredients. Marinate the chicken for 30 minutes.
While the chicken is marinating, prepare the sauce ingredients and the garlic and ginger.
Heat the wok and add oil.

When oil is ready, add the garlic and ginger and stir-fry until aromatic.
Add the chicken and stir-fry until it changes color. Push up to the sides of the wok, making a well in the middle. Add the sauce.
Combine the sauce and the chicken. Stir-fry for another minute and serve hot.
*If you find the orange flavor too overpowering, try substituting a combination of orange juice and water to make 1/3 cup.

Orange Chicken serves 3-4 for chicken 1 pound chicken thighs, cut into strips 1 tablespoon soy sauce 1 tablespoon sake 1 teaspoon grated ginger 1/2 cup potato starch oil for frying for orange sauce 2/3 cup orange juice 1/3 cup marmalade 2 teaspoons potato starch (halve if using cornstarch) 1/2 teaspoon salt Put the chicken in a bowl with the soy sauce, sake and ginger and marinate for at least 15 minutes. When the chicken is done marinating, lightly dust each piece with potato starch. Heat a pot with at least 1/2″ of oil in it over medium heat until hot. In a separate pan, add the orange juice, marmalade, 2 teaspoons of potato starch and the salt and whisk to combine. Fry the chicken until golden brown and transfer to a paper towel lined plate to drain. When the chicken is done frying, heat the orange sauce over medium high heat, stirring constantly to prevent clumping until the sauce is thick and bubbly. Add the fried chicken into the orange sauce and toss to coat. You can garnish it with some chopped red bell pepper for some extra color. .....

Orange Chicken with Peanuts
2 lg. chicken breasts, boned, skinned and split
1 tbsp. soy sauce
1 tbsp. rice wine or dry sherry
4 scallions, cut in 1 inch pieces
1 tsp. fresh ginger, peeled and minced
1/2 c. orange juice
1 clove garlic
1/2 tsp. cornstarch
1/4 c. peanut oil
1/2 c. fresh snow peas
1/2 sm. red pepper, cut into thin strips
1/2 c. peanuts, roasted and chopped
Cut chicken into 1 1/2 x 1/2 inch strips. Mix soy sauce, sherry, scallions, and ginger. Add chicken and toss well, set aside.
Combine orange juice and cornstarch, set aside.
Heat oil wok, lightly sauté clove of garlic to flavor oil, take out and proceed.
Stir fry chicken until chicken loses color, add pea pods, red pepper, peanuts, stir fry 2 minutes. Stir orange juice mixture, add to chicken and stir fry until slightly thickened. Serve immediately. Makes 4 servings.
