Crabmeat Broccoli Casserole

12 slices bread
2 1/2 cups milk
1 cup mayonnaise
7 hard-cooked eggs, finely chopped
1 lb fresh crabmeat
1/4 cup chopped onion
1 tbs plus 1 tsp chopped fresh parsley
2 pkg (10 oz each) frozen broccoli
1 cup shredded sharp Cheddar cheese

Remove crust from bread. Cut bread into 1/2" cubes. Combine bread cubes, milk, and mayonnaise; stir well. Cover and refrigerate 30 minutes. Stir in eggs, crabmeat, onion, and parsley. Cook broccoli according to package directions; drain well. Arrange broccoli in a lightly greased 13x9x2" baking dish. Spoon crabmeat mixture over broccoli. Bake, uncovered, at 325°F. for 40 minutes. Sprinkle with cheese and bake an additional 5 minutes or until cheese melts. Serves 5.

Simple Pumpkin Soup
1/2 cup onion
3 tbsp. butter
2 cups mashed cooked pumpkin
1 tsp. salt
1 tbsp. sugar
1/4 tsp. nutmeg
1/4 tsp. ground pepper
3 cups chicken broth
1/2 cup half and half or fat free half and half.

Chop the onions and gently brown in the butter in a pan. Put mashed pumpkin into onions in pan with the salt, sugar, nutmeg and pepper. Slowly add chicken broth and heat thoroughly, but do not boil. To serve, pour into a tureen and add the cream. Makes 4 to 6 small servings.

I either make a scalloped corn or a baked brussel sprout dish on the side. And ocassionally homemade cornbread with cranberry jam instead of the usual rolls.

We fry our turkey in peanut oil, and after it is done - we drop in thinnly sliced sweet potato slices - and make sweet potato chips. We then sprinkle them with salt and a little sugar. And - you can also use a little maple syrup to dip them in like catsup with french fries. They are awesome!

It's really fun - we just stand around the picnic table outside and eat these as fast as we can!

(It's our snack before Thanksgiving Dinner LOL)

"Streusel Squash Dessert" - 15-18 servings

1 1/2 cups all-purpose flour
1/4 cup sugar
1/4 cup confectioners' sugar
1/2 cup cold butter
STREUSEL TOPPING:
1/4 cup packed brown sugar
2 tbsp. all-purpose flour
1 tsp. ground cinnamon
2 tbsp. cold butter
1 cup chopped pecans
FILLING:
1 medium butternut squash (4 lbs.); peeled, seeded and cubed
1 cup sugar
1/3 cup packed brown sugar
1/4 cup cornstarch
3 tsp. ground cinnamon
1 tsp. salt
1 tsp. ground ginger
1/2 tsp. ground nutmeg
1/2 tsp. ground cloves
2 (12 oz.) cans evaporated milk
Whipped cream
Additional cinnamon

In a bowl, combine flour and sugars; cut in butter until crumbly. Press into an ungreased 13x9x2" baking dish; bake at 350* for 15-20 minutes or until edges begin to brown. In a small bowl, combine brown sugar, flour and cinnamon; cut in butter until crumbly. Stir in pecans; set aside.
Place squash in a large saucepan and cover with water; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender; drain. Transfer to a blender or food processor; cover and process until smooth. In large mixing bowl, combine the sugars, cornstarch and seasonings. Gradually beat in 4 cups squash, milk and eggs until smooth (save any remaining squash for another use). Pour over crust; sprinkle with topping.
Bake at 350* for 55-65 minutes or until a knife inserted near center comes out clean. Cool on a wire rack. Cover and refrigerate overnight. Garnish with whipped cream and additional cinnamon.

We do a duck, turkey and a ham. We like a good variety.
Most the rest is your traditional fixings except I do make a great upside down apple pecan pie.

Everyone in our family hates pumpkin pie so we have pumpkin cheesecake instead.

try cornish hens. thaw, coat with olive oil, sprinkel with pepper,garlic powder,and lowery's season salt and parsley flakes. bake @ 350 approx 1 hour.HAPPY,HAPPY,HAPPY.
