MY GRANDMA PLACES A FEW ICE CHIPS IN THE MIDDLE OF HER MEATLOAF,AND THEN COOKS IT. SHE NEVER POKES AT IT CAUSE IT LETS OUT THE JUICES. YOU ACN EVEN COOK IT IN AN OVEN BAG. EITHER ONE IS GOOD. JSU BEFORE IT GETS DONE MAKE A BIG BOWL OF MAHSED POTATOES, REMOVE MEATLOAF FROM THE OVEN AND SPREAD THE POTATOES AROUND THE MEATLOAF, THEN SPRINKLE WITH CHEESE PALCE BACK IN TILL THE CHEESE IS WELL MELTED .... THIS IS SOOOOOOOOOOO GOOD.

I just made a meatloaf over the weekend, and it was the best I have ever had. The recipe I used included and ingredient that I wouldn't have put in meatloaf myself. When you are mixing all of your regular ingredients, also add 1/2 heavy cream. It makes all the difference in the world. I also put some bacon on top of mine then covered the bacon with salsa that I had made the day before. It honestly was the best I have ever had. It only took about 15 minutes to prepare and one hour to cook at 350 degrees.

"Down-Home Meatloaf" - 8 servings
2 eggs; beaten
1/4 cup milk
2 cups soft bread crumbs
3/4 cup finely chopped onion
1/3 cup finely green pepper
2 tbsp. prepared horseradish
1 1/2 tsp. salt
1 tsp. ground mustard
2 lbs. ground beef
1/4 cup catsup
In a bowl, combine the first 8 ingredients. Crumble beef over mixture; mix well. Press into 9x5x3" loaf pan. Bake at 350* for 1 hour. Spread with catsup; bake 15-20 minutes longer or until a meat thermometer reads 160* and meat is no longer pink. Let stand 10 minutes before slicing. Meatloaf may be frozen for up to 3 months.

2lbs. ground beef
2 slices soft white bread, torn in bite size pieces
1 envelope dry onion soup mix
1 egg
1/2 cup ketchup
4 slices bacon
Mix first five ingredients and place in a loaf pan. With a spoon handle, make a trough lengthwise in the meat and fill with more ketchup. Place 2 slices bacon on each side of trough. Cook at 350 F for 1 hour, draining juices halfway through cooking time. This is really moist and good, kids love it too.

Beefy Mushroom Meatloaf
4 oz mushrooms, chopped
2 tsp butter
2 lb ground beef
1/2 medium onion, finely chopped
1 can (10 1/2 oz) beefy mushroom soup
1/2 cup fine dry bread crumbs
2/3 cup quick cooking rolled oats
1 egg, lightly beaten
1/4 tsp pepper
Saute mushrooms in butter over medium-low heat until browned and tender. In a large bowl, combine mushrooms and remaining ingredients, mixing lightly until thoroughly blended. Spray a 7x11 or 9x13 baking dish with cooking spray.
I lost the bake time and temp, but I think it is at 375 degrees F for 1 hour.

Meatloaf
1-2 lbs hamburger or ground turkey
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato sauce
Topping
1 can condensed tomato soup
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute
In bowl, combine beef, onion, garlic, eggs, tomato sauce and crackers. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.

Also, he tells you to shape the meatloaf in a loaf pan and the turn it onto parchment paper on a cookie sheet. This definatly seems to make the meatloaf less greasy but still jucy.

The trick to this is 2-part, first you must add liquid before to the meat(all so helps w/ the favor, just stick with one type...Spanish flair, add rotel can tomatoes, southern-combine low sodium beef broth, garlic powder, whorshire or cream of onion soup) Combine meat, liquid, egg(the whole thing, except shell :) It should feel a little loose, like almost mud pie consistely, then put in an oven prof container, bake @400 for 15 min. then cover till it reaches 155F internal, smile over your beautifully meatloaf

The higher fat content in your hamburger usually the juicer it will be. I do a very simple recipe and it turns out so tender
20% hamburger meat
Baby Rays BBQ suace
Finely chopped orange or yellow bell pepper
dried onions
salt and pepper
breadcrumbs in can
I mix all of this up and put in glass cassarole dish. I top with slices of uncooked bacon and more BBQ sauce. Bake in 350% oven until crispy on top and tender on the inside
