Serves/Makes: 8
Ingredients:
2 1/2 cups flour
1 teaspoon ginger
1 teaspoon baking powder
1/2 teaspoon cloves
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup margarine
1/4 cup molasses
2 tablespoons sugar
1 teaspoon brown sugar
1/4 cup water
Directions:
In a small bowl combine flour, ginger, baking powder, cloves, cinnamon and nutmeg. Set aside. In small saucepan heat over low heat (melt) margarine, sugars and molasses. Pour in large bowl; cool for 10 minutes. Alternately stir in flour mixture and 1/4 cup water until well blended. Cover; chill an hour. Preheat oven to 350 degrees. Roll out dough 1/8-inch thick, using 6-inch long cookie cutter. Bake on sheet, sprayed with nonstick vegetable spray. Decorate with raisins. Bake 5 to 7 minutes.
Ginger Bread Cookies with Butter Cream
Ready in: 2-5 hrs
Difficulty: 3 (1=easiest :: hardest=5)
Serves/Makes: 10
Ingredients:
2/3 cup shortening
1 cup sugar
1 egg
1/4 cup molasses
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon of ground cinnamon, cloves, and ginger
***Icing***
3 cups confectioners sugar
1/3 cup butter (no substitute) softened
1 teaspoon vanilla extract
1/4 teaspoon lemon extract
1/4 teaspoon butter flavoring
3 tablespoons milk
Directions:
In mixing bowl, cream shortening and sugar. Beat in eggs and molasses. Combine flour, baking soda, salt, and spices, gradually add to the creamed mixture and mix well.
Refrigerate for 2 hours or overnight. On a lightly floured surface, roll dough to 1/4 inch thickness. Cut into desired shapes.
Place on ungreased baking sheets. Bake at 350F degrees for 8-10 minutes or until edges begin to brown. Cool on a wire rack.
For icing: beat sugar, butter, and flavorings in mixing bowl. Gradually stir in milk until smooth and thick. Frost cookies.
Gingerbread Men 2 Recipe
Difficulty: 3 (1=easiest :: hardest=5)
Serves/Makes: 34 cookies
Ingredients:
1/2 cup honey
1/2 cup sugar
1/2 cup unsalted butter
2 1/2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon grated nutmeg -- preferably fresh
1/8 teaspoon ground cloves
***Decoration***
3/4 cup white chocolate chips
red-hot cinnamon candies
narrow red, green or gold ribbon
Directions:
In a small saucepan, bring honey, sugar and butter to a boil. Boil, stirring, until sugar dissolves. Cool to room temperature (about 1 1/2 hours). In a large bowl, stir flour, baking soda, salt and spices until blended. Stir in honey mixture and knead until smooth. divide dough in half; wrap 1 half and leave at room temperature. Heat oven to 350 degrees.
Have ready 5 1/2" and 3 1/2" gingerbread men cookie cutters and lightly grease cookie sheet. On a lightly floured surface with a lightly floured rolling pin, roll out unwrapped half of dough to 1/8"" thick. Cut out cookies using 5 1/2" cutter. Place 1" apart on greased cookie sheet. reroll scraps. Gently press cinnamon-candy buttons in place. Repeat with remaining dough, using 3 1/2" cookie cutter. Bake 6-8 minutes until edges are lightly browned. Let cool on cookie sheet 1 minute before removing to a wire rack to cool completely. Place white chocolate chips in a quart-size Ziploc bag. Microwave on high 30 seconds. Press bag to see if chocolate has melted; if not, repeat at 5 second intervals. Knead bag until chocolate is smooth. Snip top off bottom corner and pipe eyes, mouth and outline each cookie. Let dry, then tie a bow around neck of each.
Basic recipe makes fourteen 5 1/2" and twenty 3 1/2" cookies.

Gingerbread Men
Ingredients
3/4 cup unsulphured molasses
3/4 cup (1-1/2 sticks) butter or margarine
3-2/3 cups sifted all-purpose flour
1 teaspoon double-acting baking powder
1 teaspoon salt
1/2 teaspoon soda
2 teaspoons ground ginger
2 teaspoons ground cinnamon
3/4 cup dark brown sugar
1 large egg
Instructions
Heat molasses in a saucepan large enough for mixing cookies. Remove from heat and stir in butter or margarine. Cool.
Sift together the next 6 ingredients, add brown sugar, and mix well. Stir into the molasses and butter mixture. Add egg and mix well. Chill 1 to2 hours or until dough is stiff enough to roll.
Divide dough in half. Roll each half 1/8 to 1/4 inch thick on a lightly floured board, chilling the second half while the first half is being rolled and cut.
Use a gingerbread-man cooky cutter dipped in flour. Place on lightly greased cooky sheets. Decorate in gingerbread-man fashion with raisings or currants or, if desired, wait until cookies are baked and cooled and then decorate with frosting.
Bake in a preheated moderate oven (350 degrees F.) 12 to 15 minutes or until lightly browned around the edges. Cool on wire racks. Store airtight.
Yield: about 16 gingerbread men

Remove from heat and stir in butter until melted. Let cool. In a large bowl, whisk together flour, baking powder, salt, baking soda, ginger, cinnamon, and brown sugar. Add egg and mix well. Refrigerate at least one hour until dough becomes stiff enough to roll. Preheat oven to 350 degrees F. Line cookie sheets with parchment paper or Silpats. Divide dough in half. Place each half between sheets of plastic wrap and roll out to a thickness of 1/8 to 1/4-inch thick. Refrigerate one half while you roll out the other half, so dough is kept cold. Dip the gingerbread man cookie cutter in flour and cut shapes. Place on prepared cookie sheets. If using the raisins to decorate, press into place now. Bake 12 to 15 minutes until lightly browned around the edges. Cool completely on wire racks, then decorate cookies as desired.

GINGERBREAD MEN COOKIES fun to make... this dough is easy to handle, rolls out smoothly, hold its shape, and best of all is "yummy" to eat.
Bring to a boil, stir well and set aside to cool: 1/2 c. molasses 1/2 c. sugar 1 tbsp. vinegar
When cool, beat slightly:
Add to the mixture.
Sift together: 1/2 tsp. salt 1/2 tsp. soda 1/2 tsp. cinnamon 1/2 tsp. ginger
Add to the mixture, blend and pat into a ball. Roll in waxed paper and refrigerate overnight. Next day, roll out on lightly floured dough board to 1/4 inch thickness and cut in desired shapes. Bake on very lightly greased baking sheet in 375 degrees for 10-15 minutes. When cool decorate with a tube of already prepared icing from the grocery.
Note: Heat, of stove ovens, does vary. If 375 degrees in your oven is too hot, try 350 degrees.
