Homogenized.... a process of treating milk, often confused with "pasteurized", has to do with emulsification.
RAW milk, milk straight out of the cow, even when chilled, will seperate. We've all heard the expression, "Given time, cream will rise to the top."
When milk is homogenized, it is "swirled" together so fast, with so much power, that the fats in the milk are absorbed into the liquid. Consequently, when it sits, it will not seperate, but will stay one smooth, "homogenous" blend.
Pasteurized, on the other hand, has nothing to do with seperating, but everything to do with heat treating the milk and thereby killing off unwanted bacteria.

It means that whole milk has been mixed so thouroughly that the fat globules will not seperate out and float to the top which would then be heavy cream. Unhomogenized milk is where we got our cream to turn into whipped cream and the remaining milk was skim milk.We just poured off the heavy cream from the top of the milk bottle.

Pasteurized, on the other hand, is when the milk has been heated for a short time to kill off bacteria and other microorganisms which can lead to disease and spoilage.

Something that is homogeneous means that if you take two samples from two different parts of the substance they will be composed of the same components. Heterogenous substances, like water mixed with sand, will be different when you take samples.
