Josie's Creamy Tuna Carbonara
1 lb cooked spaghetti
1 qt heavy cream
2 cans 6 oz tuna flakes in brine
1/4 cup white sugar
1/4 stick butter
1 8 oz pkg sliced fresh mushrooms
grated cheese, minced garlic, minced onion, salt, pepper
1. Melt butter in a sauce pan. Add garlic and onion.
2. When onion appears glassy, stir in tuna flakes and mushroom.
3. Pour in heavy cream. Bring to a boil. Add sugar. Reduce heat. Simmer for 2 minutes. Season to taste.
4. Pour over cooked spaghetti. Sprinkle with cheese. Share with family and friends.

Chinese Style Green Beans
serves 4
1 lb fresh green beans
1/4 c vegetable oil or peanut oil (I used rice oil)
sauce:
2 T soy sauce
2 T water
1 T sherry
1 T sugar
1 t cornstarch
chili or garlic chili paste to taste (I use a teaspoon)
Wash the beans and chop off the ends. In a small bowl combine the sauce ingredients. Heat a heavy pan and add the oil. When the oil is very hot, add the beans and cook, stirring frequently until the beans are wrinkled slightly, 5-10 minutes. Scoop out the beans and drain off the oil. Drain the beans on a paper towel then return the beans and the sauce mixture to the dry pan and cook until thickened. Serve with rice.

Place the bacon and chopped garlic in a large skillet with the olive oil. Add

Beat the eggs in a bowl with the cheese.
Cook the spaghetti in boiling salted water for about 12 minutes. Drain and

Linguine Carbonara
Ingredients
1 tb Salt
1 tb Oil
1 lb Dried or fresh linguine
1/2 c Butter
1/2 c Grated parmesan cheese
4 lg Eggs, well beaten
1 tb Chopped fresh parsley
Instructions
1. In a 6 qt saucepan, bring 4 qts of water to a boil. Add linguine, and return to a boil. Cook linguine 8-10 min. or until done to your taste.
2. When linguine is drained and set aside prepare sauce. Place butter and parmesan cheese in a large skillet. Cook over medium heat stirring constantly with a wooden spoon until butter melts and is thoroughly combined with cheese.
3. Reduce heat to low; add drained linguine. Toss to coat with butter and cheese mixture. Add eggs all at once and toss with wooden spoons until eggs are just cooked. Immediately remove from skillet. Transfer linguine to a warmed platter and sprinkle with parsley.
