Any cool recipe including tomatoes will be appreciated!

Stuffed tomatos...one of my favs!

pre-heat oven to 325
slice off the top of 4 beefsteak tomatos
use a spoon & knife to remove the innards.
Chop up the innards and drain of excess juice, place in medium bowl
to the chopped innards, add (measurements are estimated, use amounts to taste) 2 cups shredded parmesean, italian spices, pepper, a tablespoon of chopped garlic, a cup of shredded mozzerella, 6 slices very crisp bacon - mix well

Place the mixure into each tomato "shell" - feel free to pour it on!

Place on cooking sheet so that they are not touching, uncovered into the oven for about 20-35 minutes.

They are done when the skin of the tomato comes off very easily when you rub it.

Serve with a knife & fork!

Fresh Tomato Salsa

2 Large tomatoes, diced
½ cup onion, diced
1/4 cup green pepper, diced
One garlic clove, minced
1/4 teaspoon ground cumin
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lemon juice

Mix all ingredients in a large bowl.
Chill in the refrigerator for one hour or more before serving.

Stuffed Tomato Salad
makes 6 servings.

6 tomatoes
celery
cucumber
shrimp
salt and pepper, to taste
mayonnaise
lettuce leaves or mixed salad greens

Prepare tomatoes. If desired, remove skins by scalding quickly. Cut a slice from stem ends of tomatoes then scoop out pulp. Chill thoroughly.
Drain pulp, chope, then combine with an equal amound of chopped celery, chopped cucumber, coarsely chopped shrimp (depending on size); sprinkle with salt and pepper. Moisten shrimp mixture with mayonnaise. Refill tomato shells and place on lettuce leaves to serve.

If the tomatoes are fresh I love to make a fresh tomato, basil, and mozzarella salad.

Wash and slice the tomatoes.
Slice the fresh mozzarella.
Clean the basil. Either leave the basil leaves whole or I lay them all on top of each other and slice through them to create little strips of basil.

Layer the tomatoes with the mozzarella slices and the basil.
Drizzle over that very good virgin olive oil.
Grind some black pepper over the top and sprinkle on a pinch of salt.

"Italian Tomato Salad" - 6 servings

5 tbsp. olive oil
4 1/2 tsp. red wine vinegar
2 tbsp. minced fresh basil
1 tbsp. minced fresh parsley
1 garlic clove; peeled
1/4 tsp. salt
1/8 tsp. pepper
4 medium tomatoes; sliced
1 small red onion; thinly sliced and separated into rings

In blender, combine the first 7 ingredients; cover and process until smooth. Arrange the tomatoes in a shallow serving dish; top with onion and dressing. Refrigerate until serving.


"Tomato Onion Pie" - 6 servings

8 cups thinly sliced sweet onions
2 tbsp. butter
12 bacon strips; cooked and drained
2 cups soft bread crumbs
3-4 medium tomatoes; thinly sliced
2 cups (8 oz.) shredded Cheddar cheese
3 eggs
1/4 tsp. salt
1/8 tsp. pepper
Additional tomato slices (optional)

In a large skillet, saute onions in butter until tender. Crumble nine bacon strips; set remaining strips aside. Place the bread crumbs in a greased 9" deep-dish pie plate. Layer with half the tomatoes, onions, crumbled bacon and cheese. Top with the remaining tomatoes, onions and crumbled bacon.
In a bowl, beat the eggs, salt and pepper; pour over the top. Sprinkle with remaining cheese; top with remaining bacon strips. Arrange additional tomato slices around the edge, if desired.
Bake at 350* for 35-40 minutes or until a knife inserted near the center comes out clean. Let stand 10 minutes before cutting. Refrigerate leftovers.
