Cajun Tomato Gravy Recipe

1 large onion, finely chopped
3 stalks celery, finely chopped
3 cloves garlic, pressed
1 cup shallots, finely chopped
2 small cans tomato paste
1 small can tomato sauce
2 tablespoons granulated sugar
Salt and pepper, to taste
2 tablespoons Parmesan cheese, grated
1 teaspoon Accent®

In an iron skillet, sauce onion, celery, garlic and shallots. When vegetables are done, add one cup water; reheat, then add tomato paste, tomato sauce, sugar, salt, pepper, Parmesan cheese and Accent®. Simmer very slowly for at least 30 minutes.

TOMATO GRAVY (1)

4 Tbsp. bacon grease
3 Tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
1 (16 oz.) can tomato juice
1 Tbsp. sugar
1/2 tsp. chili powder

Brown flour in bacon grease. Add salt and pepper, then
tomato juice. When thick, add sugar and chili powder.


TOMATO GRAVY (2)

1/2 c. chopped onion
3 Tbsp. bacon drippings
2 Tbsp. flour (all-purpose)
2 c. stewed or canned tomatoes
1 tsp. salt
1/4 tsp. pepper

Saute onion in drippings. Add flour and brown slightly.
Add tomatoes and stir until thickened. Season with salt and
pepper. Thin with water if necessary. Yield: About 2 cups.



Tomato Gravy (3)

A recipe for southern tomato gravy, good on pasta, meatloaf, and chicken.

INGREDIENTS:
2 tablespoons olive oil
2 cloves garlic, minced
4 green onions, finely chopped (white part only)
3 large ripe tomatoes, peeled, seeded, finely chopped
1/2 cup whipping cream
1/4 teaspoon salt
1/4 teaspoon ground red pepper
1/2 teaspoon dried thyme

PREPARATION:
Heat oil in a skillet over medium heat until hot; add garlic and green onions. Cook 5 minutes, stirring constantly.
Add chopped tomato; reduce heat and simmer 2 to 3 minutes, stirring constantly. Stir in whipping cream and remaining ingredients; simmer, stirring constantly, until slightly thickened. Serve over chicken, fish, or pasta. Makes 2 cups

Tomato Gravy

1 14 ½ ounce can chopped tomatoes
2 tablespoons sugar
½ teaspoon salt (taste ... may need more)
½ teaspoon pepper
2 tablespoons vegetable oil
2 tablespoons plain flour
2 cups milk

Combine tomatoes, sugar, salt and pepper in a sauce pan. Bring to a boil. Reduce heat and allow to slow cook about 15 minutes. Meanwhile heat oil, add flour. Stir and cook until the color of peanut butter. Add milk, stirring all the while adding tomato mixture. Cook until it thickens.

Dip and serve over hot biscuits. When using fresh garden tomatoes, peel and add about 2 cups, chopped up.

That's what the Italians in Philly & maybe New York call pasta sauce. They also call all pasta "macaroni".

Yes I have at a local restaurant and I especially liked it with meatloaf. Very yummy.

OH YES. WE LOVE IT DOWN HERE IN SOUTH GEORGIA!!! IF YOU DON'T HAVE FRESH TOMATOES, USE CANNED TOMATOES. STEW THEM DOWN WITH A LITTLE BACON GREASE, SALT AND PEPPER AND ENJOY WITH HOMEMADE BUTTERMILK BISCUITS, RICE, GRITS, OR ON PLAIN DRY TOAST.

usually i would serve wit lamb chops wit chick peas onions chillies [really hot ones] very simple and very tasty
