One of two simple questions-
What was the most interesting part of your day?
or
What was the most interesting thing you did today?
Don't ask
how was your day?
The first two questions are great. She know the answer. She has to think about it. And it will bring her back to the best part of her day, associating it with you.
These questions are also great because its not a yes or no answer, she has to think about it and her answer can offer many verbal handles to grab onto and keep the conversation alive. Just be genuinely interested and she will do a lot of the talking.

Check this. you need to talk generally on dates, more in depth on the phone. studies (and personal experience) proves that a major flaw with continuing relationships and the first date, is that you two exhaust alot of the subject matter for Number 2. you need to pace yourself. a good way to have a phone conversation is to start off general... How are you, How was your day, What's new, etc.,. then, branch into something she said. really, that happened so soon? i can't believe it. no, i didn't know that. stuff like that, to branch out. by the way, when you feel a conversation slowly drying up, already be formulating a reason to hang up, whether it be "I'm tired, see you tomorrow", or "I have alot of Hw to do", or, in bad times, "I gotta go, my sister's on the other line." have one of those handy. limit conversations to an hour to start, and work your way up. the awkward breathing thing should disappear.

Be yourself, Some people are not phone people, and if both of you aren't well thats not to good. Maybe you guys can email instead of Talk on the phone. may sound cheesy, but thats what people did in the old days, wrote letters to each other. Also, be yourself cause the "Truth" always comes out in the long run.

maybe ask her about her interests : politics, theatre, current events, hobbies etc.
you don't have to talk all the time to enjoy each other's company
maybe have a movie date where she picks three movies that she likes and you pick one of out the three to watch, pop up some yummy popcorn, fluff up a few pillows, and get ready for a great comdey or drama....that might ease up on some of the conversational issues..then when it is done talk about what you liked or what actor you admire etc. that might be fun for both of you
have you all ever tried outdoor sports? throw a frisbee around in the fresh air!

Some people just aren't good on the phone together. Me and my boyfriend (of three years) very rarely have long good conversations on the phone but we have a blast and talk about everything and anything when we are together. Instead of talking on the phone a lot send her some cute witty text messages...

talk about favorites and stuff. dont try to make conversation, it should just come naturally. discuss how eachothers day went and that will usually spark a conversation and go from there.
