Easy Shrimp & Scallop Scampi

1 to 1 1/2 stick unsalted butter
5 to 8 large cloves garlic sliced
1/2 lb deveined shrimp
1/2 lb scallops
Cooked fettuccine
Fresh grated pamesan or romano cheese

Melt butter. Saute garlic for a few minutes. Pat scallops dry with paper towels (they have alot of moisture). Add shrimp & scallops to butter and saute just a few minutes till done (shrimp will be pink). Add fettuccine; cook about a minute or two to infuse the flavor into the pasta. Plate and sprinkle with cheese. Serve with salad and garlic bread.

This is sooooo easy & you can do anything you want with it....make it with more or less butter, garlic, seafood or pasta and make it however you like it or for however many people you are feeding. Using unsalted butter keeps the seafood from being tough.

You wil need:
mayo
ranch dressing
butter
olives
chedder cheese

Warm the scallops in a pan with butter until cooked through, add the shrimp just at the end to allow them to warm up a little.

For one pound of pasta:
cook your pasta as usual, drain well
add 2 cup mayonaise, 2 cup ranch dressing, mix well
refridgerate until cold
add cubed cheese (chedder works best I think), sliced olives
add shrimp & scallops
mix well

This isn't really a true recipe, but more of just something we do for a fast and easy meal. First, start the water boiling in a large pot for whatever pasta you are going to have (we like whole wheat fettuccine). In a large fry pan, saute fresh minced or pressed garlic in butter or olive oil (depends on how healthy you want to be) to your taste. Add fresh or frozen broccoli and stir fry. Add shrimp and the scallops and stir fry. When the pasta is cooked, drain then toss with the garlic, broccoli and seafood mixture. Top with Parmesan cheese, shredded mozzarella, or whatever kind of cheese you like. You can add other veggies such as onions, peppers or tomatoes. Experiment with seasonings that you like or use other protein such as chicken or crab or even salmon.

Here's one with 9 ingredients and it says 30 minutes total time. I've never made it but I love Kraftfoods.com lots of good recipes and on the side you can enter a search with the ingredients you want to use. Good luck!

3/4 lb. sea scallops, halved
1/2 lb. asparagus, cut into bite-sized pieces
2 Tbsp. chopped fresh dill
2 Tbsp. butter or margarine

MELT butter in large skillet on medium-high heat. Add shrimp, scallops, asparagus and dill; cook until shrimp turn pink, stirring occasionally. Remove from skillet; cover. Reduce heat to low.
ADD milk, sour cream and mustard to skillet, stir until well blended. Cook until mixture is heated through, stirring frequently. (Do not boil.)
STIR shrimp mixture into sauce; cook until heated through. Serve over noodles.
