if they are supposed to be soggy = with the meat
if they are supposed to be 'al dente' = 20 minutes before the roast is done

You are right about not adding the potatoes & carrots right away with the roast. The important thing is to cook it on very low temperature and covered with foil for tenderness. Once it is in the oven for about 45 minutes is a good time for the extras. Use baby carrots and peal your potatos and cut into wedges. I like using a crock pot for roast with the veggies. Sounds good, yum!

I fill the bottom of my roasting pan with potatoes, onions, carrots and celery. Then I brown my meat (maybe a minute on each side) to seal in the juices, and place the meat on top of the veggies! I'll add some beef broth (sometimes a can of golden mushroom soup with 1/2 can of water) salt and pepper cover it and VOILA! A meal fit for a king!

It depends on how you are cooking it. If you are doing it on the stove, or pressure cooking, I would give the veggies about 1/2 an hour to cook at the end.
If you are slow cooking, I usually put the veggies in about an hour before the roast is done.

dont do anything till you read this send me your address and i'll be over and help you cook it !!! take the roast and roast it all in one of those roasting bags they work great put every thing in bag with a seasoned roast chop up a little celery and add it with onions,potatoes,carrotts and the seasonong that come with the bag.. you cant go wrong and i'll be there shortly...

I like cooking my roast first then add the veggies, that way the veggies won't be soggy. Yes, don't forget the onions.

Add them after the meat is just about done so you veggies dont get too soft or mushy and don't forget the onions either.

put the veggies in a separted pot, and cook them when u feel like it, they'll be ready when u r

i like my meat pretty tender, so when you notice that your meat is getting fork tender, i put the veggies in and then you should be done in about a half hour.
