My friend just introduced me to marjoram which I never used before.

I love cardamom especially when it's fresh.

I love them all, provided they are in the right things, in the right combinations.

My fav would have to be sage, but I am not sure if that is a lesser known spice or not.

I don't know how well known it is, but I love tarragon. It's almost...like parsley with a faraway hint of mint...it makes an excellent cream sauce over chicken or pasta.

spanish saffron. There are so many spices that I use often and this is not one of them. I love it for it's completely unique and uncomparable flavor. The color it creates is great too.

i like caraway seeds. you can use them whole or powder them. they have a very unique taste and they are great on potatoes with butter.
