Because they are fattened up for market and only allowed to live in muddy sties.
Actually, if you talk to farmers and veterinarians, pigs are very clean animals when allowed to live in clean conditions. They are also quite smart. If fed properly, they would not be fat.

They are fat so that there is more meat on them to feed people. Technically, pigs are one of the cleanest animals.

They are not fat, they are just shaped this way naturally. Dirty... I don't know, I guess they just like dirt.
