Does anyone know of any sources or websites that can tell more about the functions of margarine in food products???

Margarine is a subsitute for anything where butter is used.

generally keeps the foods from sticking to the pan, makes firm crust or outter layer.

That's why in cake recipies you can subsitute apple sauce.
