The word used for "man" in that passage is the Hebrew word "adam," which means "human being" or "mankind." Understand that "mankind" refers to humanity and not just to men.
The passage can be accurately translated this way:
So God created mankind in His own image. In the image of God He created mankind. Male and female He created them.
Men and women together are a reflection of the image of God. Neither man nor woman alone is that reflection.
Adam is given his name out of that word "adam" as the beginning of all of mankind.
Many have been influenced by the deconstruction movement although most don't even know what it is.
