Chocolate Mayonnaise Cake

"Mayonnaise makes this cake nice and moist."
Original recipe yield: 2 -8 or 9 inch layers.

INGREDIENTS:
1 cup mayonnaise
1 cup white sugar
3/4 cup water
2 cups all-purpose flour
1 1/2 teaspoons baking soda
4 tablespoons unsweetened cocoa powder
1/2 teaspoon salt
2 teaspoons vanilla extract

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 or 9 inch round cake pans.
Sift all-purpose flour, salt, baking soda, and cocoa together.
Whip mayonnaise, white sugar, cold water, and vanilla together until mixed thoroughly. Add flour mixture slowly and beat at medium speed of an electric mixer for 2 minutes. Pour batter into prepared pans.
Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes. Frost with your favorite frosting.

Bake at 350 degrees F (175 degrees C) for 50 to 55 minutes. Cool for 10 minutes in the pan, then turn out onto a wire rack and cool completely. Glaze with Chocolate Glaze, or as desired.

Coca-cola Cake Recipe

INGREDIENTS:
2 cups self-rising flour
2 cups sugar
3 tablespoons cocoa
1 cup Coca-Cola
1 cup butter
1 1/2 cups miniature marshmallows
2 eggs, beaten
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla extract

Frosting:
1/2 cup butter
1 tablespoon cocoa
6 tablespoons Coca-Cola
1 box confectioner's sugar, (1pound)
1/2 cup chopped pecans
PREPARATION:
Grease and flour a 9 x 13-inch pan and set aside.
In a large bowl combine flour and sugar. In a saucpan combine the cocoa, Coca-Cola, butter, and marshmallows; bring to a boil. Combine the boiled mixture with the flour and sugar mixture.

In a separate bowl mix eggs, buttermilk, baking soda, and vanilla; add to the first mixture. Pour into prepared pan and bake at 350 degrees for about 35 minutes, until cake tests done.

Frosting: In a saucepan, bring butter, cocoa, and Coca-Cola to a boil. Stir in the sugar and mix well. Stir in nuts. Spread over the cake while both cake and frosting are still warm.
Serves about 16.

Chocolate Cake
Ingredients
1 1/2 C. Flour
1 1/2 C. Sugar
1/2 C. Baking Cocoa
1 1/2 tsp. Baking Soda
1/4 tsp. Cream of Tartar
1 tsp. Salt
2/3 C. Shortening
2/3 C. Whole Milk (Buttermilk can be used, if so omit the cream of tartar.)
2 Eggs, unbeaten
1/3 C. Milk
1 tsp. Vanilla

Sift together flour, sugar, cocoa, baking soda, cream of tartar, salt. Add shortening, and whole milk to the sifted mixture. Beat until smooth and add eggs, milk, and vanilla. Beat until mixed. Bake at 350 degrees for 30 to 40 minutes. Serve with Carmel frosting.

Carmel Frosting
1/2 C. Butter
1 C. Brown Sugar
1/4 tsp. Salt
6 Tbsp. Milk
3 C. Powdered Sugar
Melt butter. Stir in brown sugar and salt. Bring to a hard boil for 2 minutes, stirring constantly. Remove from heat and add milk, stirring vigorously. Put back over heat and bring to a full boil again. Set aside and cool until lukewarm. Stir in powdered sugar until smooth, and cool enough to spread.

Hot Fudge Walnut Pudding Cake

1 1/4 c white sugar, divided
1 c all-purpose flour
7 tbsp cocoa, divided
2 tsp baking powder
1/4 tsp salt
1/2 c milk
1/3 c butter, melted
1 1/2 tsp vanilla
1 c semi-sweet choc chips
1/2 c packed light brown sugar
1 1/4 c hot water

sweetened whipped cream
walnuts

In bowl, stir 3/4 c white sugar, flour, 3 tbsp cocoa, baking powder and salt. Stir in milk, butter and vanilla, beat until smooth. Stir in chocolate chips.
Pour batter into 8 or 9 inch square pan. Stir remaining 1/2 c white sugar, brown sugar and remaining 4 tbsp cocoa. Sprinkle mixture evenly over batter.
Pour hot water over top; do not stir.
Bake at 350 for 35-40 mins. Let stand 15 mins.
Spoon into dessert dishes, spooning sauce from bottom of pan over top of cake.

Garnish w/whipped cream and walnuts

Makes about 8 servings

Chocolate Chip Coffee Cake:

1/2 cup butter or margarine, softened
1/2 cup sugar
2 large eggs
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 (8-ounce) container sour cream
1 teaspoon vanilla extract
1 cup (6 ounces) semisweet chocolate morsels
1 teaspoon ground cinnamon

Beat butter at medium speed with an electric mixer until creamy; gradually add sugar, beating well. Add eggs, 1 at a time, beating just until yellow disappears.

Combine flour, baking powder, and soda; add to butter mixture alternately with sour cream, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Stir in vanilla.

Spread half of batter into a greased 9-inch square pan. Sprinkle with chocolate morsels and cinnamon. Spread remaining batter over chocolate layer.

Bake at 350° for 35 minutes or until cake begins to leave sides of pan; cool in pan on a wire rack. Cut into squares.

Yield: 9 servings

This is my favorite cake to eat and to bring to "get-togethers". I believe that the chocolate and cinnamon combination is why I love it so very much and the buttermilk gives it a very rich texture.
Even if you do not pick this cake as "Best Answer", please try it so that you will be able to see what I mean about it being so very good.

In a sauce pan; combine 1/2 cup butter or margarine, oil, water, and 1/4 cup cocoa. Bring mixture to a boil, remove from heat and add to dry ingredients.
Dissolve baking soda in buttermilk; add with eggs, salt, cinnamon and 1 teaspoon vanilla to cocoa, flour mixture and stir well.
Pour batter into a 9 x 13 inch pan. Bake at 375 degrees F (190 degrees C) for 20 minutes.
To Make Frosting: Five minutes before cake is done combine 1/2 cup butter,1/4 cup cocoa and 1/4 cup milk in saucepan and bring to a boil.
Remove from heat and stir in confectioners' sugar, 1 teaspoon vanilla, and chopped pecans. Pour frosting over hot cake. Cake remains moist and may be frozen. Serves 20.

About ten years ago when the food network was young, Marcel Desaulniers, made a fudge chocolate cake. I did not record it but was able to go by his instruction off the TV. It was the best darn chocolate fudge cake I ever made.

I later tried to purchase the recording from food network. But they just didn't want to give it up.
