We are having soup and salad. Homemade soup that is too. A great Northern Woods soup that has turkey kielbasa, chopped onion, sliced carrot, fresh garlic, oregano, vegetable broth and spinach (not bagged either!) with great northern beans. It is a hearty soup for cold days, and partnered with a romaine based salad with mushrooms, carrots, tomatoes, cucumber, and green bell pepper with a light garlic vinaigrette makes it a wonderful meal with some bread on the side! :) Also, I do not add any salt, the salt in the kielbasa and broth is plenty. I cook low-sodium all the time, and you can just taste the food better. I use Mrs. Dash in most everything I cook...just tastes great!
I always make my meals unless we are on the run, and have to grab a bite to eat out at a local deli. I am not too much of a fast food fan.

Shrimp Gumbo Casserole

Gumbo:
1 cup finely chopped onion
1 cup finely chopped celery
2 tablespoons olive oil
2 bay leaves
1/2 teaspoon dried thyme
1 teaspoon lemon-pepper seasoning
1 1/2 teaspoons House Seasoning, recipe follows
1 cup chicken or fish stock
1 (14 1/2-ounce) can diced tomatoes
10-ounce package frozen cut okra
2 cups shrimp, cleaned, peeled, and deveined
Topping:
1 egg, beaten
1/3 cup milk
12-ounce package corn muffin mix
In an iron skillet, saute onion and celery in oil. Add bay leaves, thyme, lemon-pepper seasoning and House Seasoning. Pour in stock and add tomatoes and okra. Cover pot and gently simmer for 30 minutes. Remove from heat and stir in shrimp.
To prepare the topping, preheat oven to 400 degrees F. Mix together egg and milk, add to muffin mix, and combine until just well-blended. Drop by tablespoonfuls on top of hot shrimp mixture, leaving the center uncovered. Bake 15 to 20 minutes.
Cook's Note: This Southern dish usually is prepared and served in an iron skillet, but may be cooked in a frying pan with an ovenproof handle.
House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.

I cooked shepherds jackets for tea tonight!
I stick some jacket potatoes in the oven and cook them as normal. meanwhile i make up mince like i would a shepherds pie. once the potatoes are cooked i halve them, take out the potato and mix with butter into mash. i put the mince mix in the potato skins, put the mashed potato on the top with a knob of butter on the top and back in the oven until the top is brown!
I always cook my meals from scratch, my daughter is 2 and hates convenience foods. she'd rather eat a home cooked meal bless her!

saurcrout and smoked sausages. The best meal ever. haha.
sometimes we get meals ready to go but that is only b/c we have a busy scedual and we have no time to cook anyhthing b/c we are always running around.
and Other times I get hime from school and cook some beef or something for a nice sit down and talk to the family meal. even though noone sits and eat just to talk.

Your dinner sounds really nice! I always cook my own food, ready meals are made with lower quality food than I would normally buy, so I don't see why I should compromise. I rarely even eat takeaway!
Tonight I shall be having a chicken curry, with pilau rice and a plain naan bread, all washed down with a couple of pints of milk! A bit plainer than yours, but a nice dinner all the same!
Tomorrow I shall be making a big pot of stew!

My husband has some friends over and they asked for Chicken Fajitas and a Spaghetti bake dish! I make my own food because my husabd hates ready-meals due to high salt and preservatives content! What you're cooking sounds great too!

We had roast lamb, new potatoes, carrots, garden peas and minted gravy. We rarely eat buy ready-meals although they would be more convenient with me being a full-time working mum!

We're having mushroom risotto, with 2 types of mushroom. I mostly cook our meals as we live in Mexico, and ready meals are not a well-developed concept! My husband is vegetarian, so I often have problems thinking of interesting things to cook.

Short Ribs, slow cooked in a crock pot for 18 hrs, sauteed cremini mushrooms and a mixed green salad with grape tomatoes.........sound good?? I'm counting the minutes till I get off (one hour, two minutes away~make that 58 minutes now.....)
