I can't say my gastronomic experience is that highly developed, but the best I've tasted is cod. It's *pure heaven*, even when simply fried! XD I know cod is too general, but I don't know which species the one I've tasted belongs to. It has a black and white body, the meat is white, and the bone is delicious to suck on no matter how you cook it ^_^

Next would be eel (or catfish, I don't know, LOL). I know this is another generalisation, but I don't know the species name either. Here in Malaysia, there are two species called "ikan semilang" and "ikan keli" (FYI, eels are called "belut"). One's freshwater, the other's marine/brackish. Unagi's amazing too, but I think that's because the sauce is just irresistable, heh =)

And third in my list is salmon. But I may be biased because of their out-of-the-ordinary meat colour for fish. And there you have it. List yours!

I think it depends on where the fish comes from and what season it is. You want to pick something that is FRESH and something that is in season. The best tasting fish I ever had was out in Seattle - Mahi-Mahi. YUMMY! If the fish is fresh and prepared correctly you won't get a 'fishy' taste.
Salmon is a great fish to cook. I will admit it is a little nerve racking because of the color. I prepare fresh Salmon (not frozen) in the summer on a cedar board on the grill. It is fabulous with some seafood rub applied (check out William Sonoma Cooking Store for board and spices!) You can also cook the Salmon in foil with lemon wedges and a few twigs of rosemary.

I'm an Indian living in Poland.
When i came here i was happy to see different types of fish. But unfortunately i find most of them dull tasting and similar in taste.
I compare this to whats available in India, especially the Arabian sea and it's a no contest.
I think the warmer sea makes a difference.

In my opinion Tilapia has the best flavor of the smaller salt water eatable fishes. First it is very mild in smell and flavor unlike flounder which smells and tastes strongly like fish. Tilapia can be prepared in just about any way you may like it. My favorite it a Caribbean, coconut, and lime recipe with just a little bit of a salt, pepper, and adobo rub. Give it a try you'll be pleased with the combo if you like the ingredients if not try it with your own special recipe and let me know if you like it!

I love eel! I think its's the best fish in world and I hate fish. A good tuna sashimi is absolutely awesome too!

I would have to say that Mahi Mahi is the best salt water fish..... lightly textured when grilled with a tropical salsa finish ---- YUM
Bluegill or trout would be my fresh water faves.... Lightly pan fried or cooked over a camp fire

I think wild salmon is the best.. grilled w/ lemon & pepper... Also I love trout. And to think I used to hate fish..
