Tuna casserole; Tuna melts--use english muffins--toast, add tuna, a slice of cheese and broil until cheese is melted, maybe a slice of tomato

I make Tuna patties

can of tuna
2 T mayo
onion
salt
pepper
a little lemon juice
1 egg
1 c bread crumbs

mix together, form into patties, fry in 1 Tbs oil---3-4 minutes each side. Serve as sandwiches or by themselves.

Tuna Casserole
(top with potato chips or fried onion rings)

INGREDIENTS:
1 can cream of mushroom soup (10.5 ounces), undiluted
1/4 cup finely chopped onion
2 teaspoons Worcestershire sauce
2 cans (7 ounces each) tuna, drained and flaked
1 cup grated American cheese or mild Cheddar cheese
1 cup loosely crushed potato chips or 1 small can French-fried onion rings
(you can also add green beans or peas if you like)
PREPARATION:
Combine soup, onion, and Worcestershire sauce; gently fold in tuna and shredded cheese. Transfer tuna casserole mixture to a buttered 1 1/2-quart casserole. Arrange crushed potato chips or French fried onion rings around the tuna casserole edge

Fruity Tuna-Salad Pita Sandwiches:

These sandwiches taste great and pair protein with carbohydrates to keep your energy level up. You can substitute one (9-ounce) can of solid white tuna in water, drained, for the tuna steak.

1 hard-cooked egg
1 teaspoon lemon juice
Dash of black pepper
1 (8-ounce) tuna steak
Cooking spray
1/4 cup diced celery
1/4 cup raisins
2 tablespoons minced green onions
3 tablespoons reduced-fat mayonnaise
1 teaspoon Dijon mustard
1 (8-ounce) can unsweetened pineapple tidbits, drained
2 (5-inch) whole-wheat pitas, cut in half
1 1/3 cups torn Bibb lettuce
8 (1/4-inch-thick) tomato slices

Slice egg in half lengthwise, and remove yolk; reserve egg yolk for another use. Dice egg white halves; set aside.

Prepare grill or broiler.

Sprinkle the lemon juice and pepper over tuna. Place the tuna on a grill or broiler rack coated with cooking spray; cook 4 minutes on each side until tuna is medium-rare or desired degree of doneness. Coarsely chop tuna.

Combine tuna, diced egg white, celery, and the next 5 ingredients (celery through pineapple) in a bowl. Line each pita half with 1/3 cup lettuce and 2 tomato slices. Divide the tuna mixture evenly among pita halves.

Yield: 4 servings (serving size: 1 pita half)

My family favorite is the "tuna thing". It sounds more involved than it really is, and even my non-fish eating husband likes it.

2 cans crescent roll dough
2 cans drained tuna
1/2 box frozen spinach
1/2 cup cottage cheese
1/2 small onion, chopped fairly fine
4-8 oz shredded cheddar or other cheese (to taste)

Preheat oven temp as directed on crescent roll package.
Grease a baking sheet and spread out both packages of crescent dough flat on baking sheet, squishing seams together, to make one large rectangle, sides hanging over the pan edge.
Mix together remaining ingredients, except cheddar cheese, and spread them the long way down the middle of the dough. Leave enough dough hanging over on each side to pull up and over the fish mixture. Sprinkle the shredded cheese over the fish, and bring the dough up over the top, meeting in the middle. Pinch the dough ends together, and be sure the two ends are also sealed.
Bake as directed for the crescent rolls, until the dough is golden and done. Slice into squares or slices and enjoy!

Chargrilled Tuna and Avocado Salad with Toasted Corn Vinaigrette
Serving Size: 6
Ingredients
Marinade:
Grated zest of 1 orange
2 tablespoons chopped fresh basil leaves
1 tablespoon chopped fresh rosemary leaves
¼ cup extra-virgin olive oil
2 garlic cloves, chopped
1 teaspoon chopped peeled fresh ginger



Toasted Corn and Vinaigrette:
8 tablespoons extra-virgin olive oil
1 ½ cups fresh corn kernel
1 red onion, finely chopped
4 scallions, chopped
1 tablespoon chopped peeled fresh ginger
2 garlic cloves, chopped
½ c up balsamic vinegar
Juice of 1 orange
2 tablespoons chopped fresh basil leaves
1- tablespoon fresh thyme leaves
1 tablespoon chopped fresh cilantro leaves
1- teaspoon kosher salt
½ teaspoon black pepper



Salad:
6 cups mixed greens
1 ½ ripe avocados, peeled, pitted, and sliced
Fresh cilantro sprigs, for garnish

Directions
Place the orange zest, basil, rosemary, olive oil, garlic cloves and ginger in a large glass or ceramic bowl and stir to mix well. Add the tuna and cover with the marinade. Cover and refrigerate for 1 to 2 hours. Place a large skillet over medium-high heat and when it is hot, add 2 tablespoons of the olive oil. Add the corn and cook until it has browned, about 4 minutes. Add the onion and scallions and cook until they are golden, about 3 to 4 minutes. Add the ginger and garlic and cook for 2 minutes. Off the heat, add the balsamic vinegar, orange juice, the remaining 6 tablespoons olive oil, basil, thyme, cilantro, salt, and pepper, stirring well after each addition. Let cool to room temperature.


Place a piece of mesh over the grill to prevent the tuna from falling through the grates. Place the tuna on the grill and cook, turning constantly, until the outside is charred and the inside is still rare, about 4 minutes.


Place 1 cup of greens on each plate and top with the avocado. Place the tuna on top of the avocado and drizzle with the corn dressing. Garnish with cilantro sprigs and serve immediately.

I love puting tuna on top of my nicoise salad. It's a easy and healthy meal.

I also mix tuna with potato salad or an artichoke dip.

Aside from casseroles and sandwiches....My swiss husband surprised me with a fantastic pasta with red sauce one night..there was a taste that was so good, but couldn't put my finger on it..he finally told me he always adds a can of tuna to it for added flavor. It's awesome! Try it!

First take a little mayo,chopped onions,pepper, and i like to add chopped jalapenos[take out the seeds first].....Mix it up let it chill for awhile....You can stuff a tomato or avocado with it....put it on top of a salad....or keep it simple and make it a sandwich with your favorite bread. Use a roll or pita too....Or make it toasted with cheese......Yummy! Now I want some!
