The reason people use the very ripe bananas is that they are the ripest (at the sweetest and most flavorful) and the softest (easist to mash).

They don't have to be black, but they have much more flavor and are much easier to smash! I made 115 muffins with 18 bananas. About 14 or 15 were black and the rest were yellow. I made husband smash all the bananas and he didn't like smashing the yellow ones. I'll give you my ABSOLUTE favorite recipe for banana muffins. I made them yesterday and made 18 muffins from one batch. Here goes:
- 1 1/2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
Mix together in a large bowl.
- 3 ripe bananas (the riper the better)
- 3/4 white sugar
- 1 egg
- 1/3 cup butter, melted
Mix together in a seperate bowl. I mix by hand because I like to get a little chunk of banana in each muffin. Then pour this mixture into the flour mixture just until moistened.
Spray muffin pans, then line with muffin liner, then spray the inside of the liners (makes it much easier to take the liner off the muffin). I use a 1/4 ice cream scoop of batter per muffin.
Bake in a 375 preheated oven for 18-22 minutes, depending on your oven. When a toothpick in the center comes out clean, muffins are done!
Sometimes I add some chocolate chips, cinnamon chips, or coconut to the batter when mixing!!
These muffins are awesome. It's the only recipe i use.
But back to the question... I would definately use black bananas over yellow ones for banana bread or muffins.

You want the ripest (darkest) bananas to make your classic bread moist and sweet. If you find you have too many black bananas, don't throw them out. Put them in the freezer and thaw them when you need them. You'll save a lot of money this way if you buy overripe ones at the grocery store. They usually sell those as a drastic discount.

You can make bread with any color the banana, just remember the darker it is the more flavorful the bread will be.

Nope... they are just harder to mush up when they are still ripe. A trick is to put ripe banana's in the freezer. Take them out a few hours before you are going to bake and let them thaw. Once they thaw they are soft and easy to mash.

Agree with everyone.
One tip, if you want to speed up the process, put the bananna in a paper back with an apple. and close it up, leave it in the pantry for a few hours. Apples excrete a chemical that hastens ripening in other fruits.

you can use ripe bananas to make bread. works fine, it will just be a little harder to mash them. bake away and have fun.

no they dont have to be... they are fine... tho if parts of the peel has some dark spots those will make a sweetier bread...

If they are not over ripe smash them up real well they will not taste as strong but will still work.
