ARTICHOKE
Artichoke with Lemon Butter Recipe
Microwave Power Level: HIGH
Approximate Cooking Time: 13 minutes.
Yields 2 servings
1/2 cups butter or margarine
Garlic salt
2 fresh artichokes (8 oz. ea.)
1 lemon, thinly sliced and halved
1/4 cup dry seasoned bread crumbs
2 tablespoons grated Parmesan cheese
1/4 teaspoon paprika
1/4 teaspoon parsley flakes
1. In small bowl, heat butter 1 or 2 minutes until melted, mix butter with the garlic salt, paprika and parsley flakes.
2. Cut stem off artichoke; trim tips of leaves, then rinse. Place lemon in between leaves; arrange artichokes in a microwave cooking dish and pour butter mixture over them. Heat, covered with a casserole cover or with plastic wrap, 9 to 11 minutes on HIGH.
3. Sprinkle bread crumbs and cheese over cooked artichokes; let stand covered for 5 minutes before serving.

Boiled or steamed, whole, then pick the leaves and dip in garlic-lemon aioli. Rip the meat out with your teeth!
