If anyone can please give me some ideas of what to cook for my husband that would be great!! He won't eat any friuts except apples, no veggies whatsoever unless it's potatoes and they can't be mashed.... and he doesn't like pasta (fetuccini, ravioli, etc.) except spagetti- but he's not a big fan. He loves any meat except most fish and he loves cheese and stuff. What can I make him?!

Cheddar cheese chicken

3 boneless skinless chicken breasts
half cup ranch dressing
1 tablespoon flour
salt and pepper
1/2 cheddar cheese
1/4 parmesean cheese


preheat over to 350.
salt and pepper chicken
in bowl, mix flour and ranch
dip chicken in mixture until well coated
place in baking pan
cover with cheese
bake around 30 minutes or so...
*check temp with meat thermomater*

If you like the spicy, cheesy taste of Doritos, you might want to try this simple dish
Enchilada casserole
Ingredients


1 can chili with beans
2 cups sharp cheddar cheese, grated
1 large 12-ounce package Doritos (save 2 cups for casserole topping)
10 to 15 oz. enchilada sauce
8 oz. can tomato sauce
2 tbsp. onion, grated
1 1/4 cup sour cream

Directions

For the topping, set aside sour cream, 1/2 cup of the grated cheese, and 1/3 of the Doritos bag.

Grate a small onion and measure 2 tablespoons and set aside. Take remaining 6-cups Doritos and crumble with your hands into mixing bowl.

Mix the onion, and all the other ingredients, except those for the topping, and place into an 8 1/2 x 11-inch casserole dish.

Bake for 20 minutes at 375 F.

Remove casserole from oven. Spread on sour cream, cover with Doritos, and sprinkle 1/2 cup cheese.

Bake for an additional 5 minutes and serve.

How about chicken cordon bleu? Take boneless skinless chicken breasts and pound them thin. Place a slice of deli ham and a slice of swiss cheese on each chicken breast then fold or roll up. Dip in egg, then bread crumbs. Place seam side down in a greased baking dish. Bake in a 350 degree oven for about 40 minutes or so or until chicken juices are clear when pierced. You can also make a nice hollandaise sauce from a packet to serve over the chicken.
A good side dish is mashed potatoes. When you mash your potatoes, add in a container of herb flavored cream cheese along with your milk.

Actually potato is not a veggie in terms of nutritional needs . . . butt back to 'his' menu - beef, baked potatoes and cheese & some apples. Unfortuantely, adults get to choose what they eat and since his diet will incur expensive medical care by middle age, (if not sooner) you may wish to start focusing on really good health care plans. Also some income planning for when he's laid up with heart surgery (investments with passive income they are called).
So, the cooking ? Grill some meat, bake a potato and have an apple & cheese plate. (then hope apples are a miracle cure)

I dont know what to cook for him but hopefully you can educate him on how unhealthy his diet is.. eating so much meat is very bad.. the most meat a person should have is a palm sized piece and even then only 5 times a week

I would put down the law.. if he is going to be a fussy eater he can make his own meals.. you and the kids can have proper meals

does he eat rice?? a person can live for ages eating only rice...

how about nachos?? they use nacho chips cheese, and you can sneak in tomatoes and green peppers and onions...

I would suggest making a lasagna. Instead of using pasta, used fried sliced potatoes. If he doesn't like tomato sauce, just layer in the meat and cheese and add a little milk or cream to create a sauce.

Burritos? That's meat and cheese. What else... how about chicken parmesan? That's delicious, and also meat and cheese. Or just the typical steak (or other meat) and a baked potato. That's classic. Hope these ideas helped!

Try this, the veggies are all mixed up in the chili and I don't know any meat eater who doesn't like chili. Cheers,

Hot and Spicy Chili
Serves 4

Nonstick cooking spray
1 small onion, chopped
3 cloves garlic, minced
3/4 pound extra-lean ground beef
2 teaspoons oregano
1/2 teaspoon kosher salt
1/2 teaspoon cayenne or chipotle pepper
1/2 teaspoon black pepper
1 tablespoon tomato paste
1/2 cup canned stewed tomatoes
1 cup canned no-sodium dark red kidney beans
1 cup canned no-sodium black beans
2 tablespoons unsweetened cocoa powder
1 cup low-sodium, nonfat chicken broth
1 tablespoon fresh cilantro, chopped
2 tablespoons shredded light taco cheese or light Mexican three-cheese mix

Coat a deep saucepan with nonstick cooking spray and heat on high for 30 seconds. Add onion and garlic. Lower heat to medium and cover pan. Saute 30 seconds. Add ground beef, mix well and cook, uncovered, until meat begins to brown slightly, about 2-3 minutes. Add oregano, salt, cayenne and black pepper and stir.

Add tomato paste, stir well and allow to cook for 30 seconds. Add stewed tomatoes and mix well. Add beans and cocoa powder, and stir gently.

Add chicken broth and cilantro and reduce heat to medium-low. Cover and simmer for 12-15 minutes. (For a thicker chili, remove cover and simmer for 1-2 minutes more.)

To serve, divide chili among 4 bowls. Top each with 21/2 teaspoons of shredded three-cheese mix.

my husband is the SAME. I am always trying to find ways to get him to eat veggies. I tried stuffed egg plant adding chorizo and lots of velvetta, and he ate the inside. I made a brussel sprout souffle but covered a lot of the taste of veggies with two kinds of cheese and cajun seasoning , and he ate that too. The idea here is to cut the veggies up so small that they seem secondary and add things that you know he likes.

Unfortunately, we have to trick our "kids" into eating veggies. I would steam veggies then puree them and put the "forbidden" veggies into spaghetti sauce, meat loaf, stews and a potato and ground beef cassarole. You can freeze the pureed veggies into your ice cube trays then when they are frozen, place them in a freezer bag, they will be ready any time you need to slip them into something. Hope fully your kids don't pick up his bad eating habits. One of mine did, now he gets the same treatment his father did. Good Luck!
