My grandmother taught me to bake. So I bake cakes and pie a lot, but i can never top my cake with homemade icing...its always store bought. please help.....

This is my favorite recipe. It goes with everything. Enjoy!

Cream Cheese Icing

1 3-ounce package cream cheese softened
1/2 cup powdered sugar
1 tablespoon lemon juice
1 tablespoon milk



In a small bowl, beat cream cheese and powdered sugar until smooth. Add lemon juice and milk; beat until smooth.

I always make homemade frosting, and get compliments all the time. I follow the Wilton's buttercream frosting in Wilton's cake decorating books, but I only use almond flavoring, not vanilla. You will need a good beater to mix it, because it gets very thick at the end of adding the powdered suger. It will freeze to you can save the left overs. There is also a recipe for chocolate buttercream frosting that is the best I have tasted.

Buttercream Icing

Ingredients:
1/2 cup solid vegetable shortening
1/2 cup butter or margarine*
1 teaspoon Clear Vanilla
4 cups sifted confectioners' sugar (approx. 1 lb.)
2 tablespoons milk**
Cream butter and shortening with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy. Keep icing covered with a damp cloth until ready to use. For best results, keep icing bowl in refrigerator when not in use. Refrigerated in an airtight container, this icing can be stored 2 weeks. Rewhip before using.

YIELD: 3 cups

*Substitute all-vegetable shortening and 1/2 teaspoon Wilton No-Color Butter Flavor for pure white icing and stiffer consistency.

**Add 2 tablespoons light corn syrup per recipe to thin for icing cake.

the best place to get different icings is from the Cake Doctor Cookbooks. They are great! Here's one from there for a basic Buttercream Frosting.

8 Tbsp (1 stick) butter at room temp
3 3/4 cups confectioners' (powdered) sugar; sifted
3-4 Tbsp milk
2 tsp pure vanilla extract.

Place butter in a large mixing bowl. Blend with an electric mixer on low speed until fluffy, 30 seconds. Stop the machine and add the confectioners' sugar, 3 Tbsp milk and vanilla. Blend with mixer on low until the sugar is incorporated, 1 minute. Increase to med speed and beat until light and fluffy, 1 minute more. Blend in up to 1 Tbsp milk if frosting seems too stiff.

Change to: servings US Metric
2 lbs powdered sugar
1 1/2 cups shortening (crisco)
2 teaspoons clear vanilla extract (if you want pure white icing)
1 teaspoon butter flavor extract
1/4 teaspoon salt
1/2 cup hot tap water

Cream shortening.
add extracts and salt mix till blended.
Then add little powdered sugar and little water.
mix on med speed till all sugar and water is used.
this makes about 2 c.
I figured that for a wedding cake 3 tier 6 10 14 takes 5 batches of icing for a finished cake if you are doing flowers need to add a little more powdered sugar to get a stiffer icing.

Chocolate Icing:

This recipe goes with Texas Sheet Cake

1/2 cup butter or margarine
1/4 cup unsweetened cocoa
1/3 cup milk
1 (16-ounce) package powdered sugar
1 teaspoon vanilla
1 cup chopped pecans

Combine butter, cocoa, and milk in medium saucepan. Cook over low heat 5 minutes or until margarine melts. Bring to a boil over medium heat. Remove from heat, and stir in sugar, vanilla, and pecans. Beat at medium speed with an electric mixer until smooth and sugar dissolves.

Yield: Makes 4 cups

BUTTER-CREAM FROSTING

1 lb. confectioners' sugar
1/2 c. butter, softened
1 tsp. vanilla extract
3 tbsp. milk
Food coloring (optional)

In large bowl, beat together sugar, butter, vanilla and milk until smooth. If necessary add more milk until frosting is spreading consistency. If desired, add a few drops of food coloring. Mix everything well.
Chocolate butter-cream frosting - add 1/2 cup Hershey's cocoa.

I know how to make it but, if I dont have it by me i forget what it all calls for, but go to a search engine, and type in Homemade Icing Recipe. My mom makes it all the time, but to tell you the truth, i dont really like the homemade icing.

A really simple one is to beat powdered sugar with some butter, then thin it just a bit with milk. You can add some unsweetened cocoa to make chocolate icing, or other flavors, such as orange extract, coconut, or anything else you want.

There are some great recipes online! They taste great. Just do a yahoo search and choose the one that looks like it has the best ingredients.
