this doesnt normally happen,is there a way to rectify it instead of starting over?

Add fat; whatever you do, don't add water. Water causes it to seize.

Ironically, while water can make chocolate seize up, it can also smooth it back out. Follow the instructions below:
If chocolate comes into contact with even the tiniest amount of water while melting, it will suddenly "seize," or turn hard and grainy. A single drop of water or a whiff of steam can trigger particles in cocoa butter to solidify into a dull mass. Ironically, adding more liquid will help smooth the chocolate back to its former satiny texture.

Instructions
STEP 1: Remove the pan from the heat.
STEP 2: For every ounce (30 g) of chocolate, add 1 tbsp. of one of the following ingredients, depending on the recipe you are making: warm water, melted butter, vegetable oil, or hot milk or cream.
STEP 3: Stir or whisk until smooth. Slowly add more liquid if needed.
STEP 4: Chocolate recovered from seizing should be incorporated with other ingredients to make sauces, frostings or batters. It is not suitable for using alone, such as for coating candy or creating decorative curls (it won't have the same shine or delicate texture).

You've probably managed to accidentally get water into it, eg. as condensed water vapour. It can be difficult to get back to smooth consistency, but try adding some butter. If it's not a huge quantity, though, and you still have unmelted chocolate left, I'd bin it myself and start over.

I would not use water. I would put it in the microwave on a low setting for a minute with some milk and stir it as soon as it comes out. iI needs the fat element in the milk to soften back to the right consistency.

Try the butter, not water. I've heard water can actually cause chocolate to seize up.

Only add desertspoonfuls of milk or cream do not add water this is what ruins it heat it very gently stirring all the time dont have the heat up too high and can I lick the spoon?

Keep adding water in small amounts, on the heat, and keep stirring. It will eventually 'unseize'. No need to start over!

Are you trying to melt choccy??? Add a little water and either low heat bain marie...or low heat microwave...and stir...it should bring it back.

butter or oil please don't use water that is what is causing it to seize...keep it on low heat and and it slowly
