You don't say which brand you are using? Different types of olive oil have different flavors. Some are milder than others

It's either low quality or rancid. Olive oil should have an almost sweet taste. There are shops here where people can buy tiny shots of olive oil just to drink!

Hmmm... sounds to me like you have rancid Olive Oil if it's Extra-Virgin !! EVOO is sweet when fresh !!

ALL oils and fats will become bitter with age and oxidation

It's not. Maybe you have an old batch or got cheap olive oil.

If it is really cheap it will be. Better quality is not bitter at all
