Just come back from Jamacia where i had the most amazing carrot cake EVER, I really want to have a go at making it at home but can not find any recipes on the net or in cook books that contain rum and have frosting can anyone help please ??

INGREDIENTS :

3 cups of shredded raw carrots
4 beaten eggs
1 3/4 pounds brown sugar
2 1/2 cups flour
1 1/2 cup oil
1 teaspoon vanilla
1 1/2 cinnamon
3/4 nutmeg
1/2 teaspoon mixed spice
1 teaspoon baking soda
1/2 teaspoon salt

METHOD:

Combine carrot and sugar and mix
Add beaten egg, then oil and vanilla and mix well
Combine and sift together the flour, cinnamon, spices, nutmeg, mixed spice, baking soda and salt
Slowly add the dry ingredients to the wet mixture
Pour into greased baking container
Bake for 40 minutes at 350F

Here is the only recipe that I have with the rum in the cake itself, all my other recipes have the rum only in the frostings.

CARROT CAKE

1 cup flour
1 1/2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp salt
1 1/2 cups grated carrots
1/2 cup chopped pecans
2 eggs
1 cup sugar
3/4 cup vegetable oil
2 tsp. vanilla or rum


CREAM CHEESE ICING

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/4 cup (1/2 stick) butter or margarine, softened
1 tsp. vanilla
1 pkg. (16 oz.) powdered sugar (about 4 cups), sifted

BEAT cream cheese, butter and vanilla in large bowl with electric mixer on medium speed until well blended.

ADD sugar gradually, beating until well blended after each addition.

If necessary, add milk to thin out to spreading consistency.
If desired, mix in chopped nuts or sprinkle them on top after spreading.


CAKE:

Combine flour, baking powder, salt and cinnamon. In a separate bowl, beat eggs, sugar and oil.
With mixer running on low speed, slowly add the flour mixture.

Blend in vanilla or rum, carrot and pecans.

Pour batter into a well greased 8 x 12 inch pan.

Bake in 325°F oven for 35 minutes or until a toothpick inserted in center comes out clean.

When cake is cool, spread with cream cheese icing.

why dont you try a mixture between a jamaica cake (soft ginger cake) and a carrot cake with rum. be a little adventurous- you just might create the next best thing!!
