There are four basic ways to make food chips and they are Drying, Pickling, Freezing or Deep Frying.

Here is an outline of methods and examples:

1.Air drying: (Examples: Jerky, dried fruit, etc.)
•Using a dehydrator
•Hanging or leaving the food out to dry in the air
•Salting and drying
•Baking at low temperature in an oven
2.Pickling: (Examples: Pickle slices, preserved fruit, etc.)
•Packing in brine (salt water)
•Preserves (packed in sugar or other preserving solution)
•There is an infinite number of ways to pickle food chips
3.Freezing: (Examples: Frozen fruit slices, and sliced vegetables)
•Most fruits need to be blanched (Dipped in Boiling water before freezing)
•Most vegetables must be blanched before freezing.
4.Deep frying: (Examples: Potato chips, veggie chips, etc.)

Chips can be sliced by hand or by using one of the many electric slicing machines on the market.

a really simple way is to peel and slice a potato into chip like shapes! then par boil (so not quite cook/not quite raw) then place on a baking tray spray with fry light oil (or if you're not bothered about calories olive oil drizzled) then toss around sprinle with salt and pepper and roast in the oven for about 30 mins, moving them around half way through!

Black Bean Dip with Tortilla Chips:

1 red bell pepper
3/4 cup minced fresh cilantro (about 1 bunch)
3 tablespoons finely chopped green onions
2 tablespoons lime juice
2 tablespoons balsamic vinegar
2 tablespoons hot sauce
1/2 teaspoon ground allspice
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
2 (15-ounce) cans black beans, drained
1 jalapeño pepper, seeded and diced
1 garlic clove, minced
Chopped red bell pepper (optional)
6 (10-inch) flour tortillas, each cut into 8 wedges
Cooking spray

Preheat broiler.

Cut the bell pepper in half lengthwise, discarding seeds and membranes. Place the bell pepper halves, skin sides up, on a foil-lined baking sheet, and flatten with hand. Broil for 5 minutes or until blackened. Place the bell pepper in a zip-top plastic bag, and seal. Let stand for 5 minutes, and peel. Place the bell pepper and the next 12 ingredients (bell pepper through garlic) in a food processor, and process until smooth. Spoon into a bowl, and garnish with chopped bell pepper, if desired.

Preheat oven to 400°.

Arrange the tortilla wedges in a single layer on a baking sheet coated with cooking spray. Bake at 400° for 5 minutes or until golden. Serve the dip with chips.

Yield: 12 servings (serving size: 1/4 cup dip and 4 chips)

You can make tortilla chips by taking corn tortillas and cutting them into chip sizes. Then you add olive oil to a pan. Then you add the chips and cook them till light brown/tan, they will harden a little more when drying.

After cooking you will find that you have just made healthy, no salt, corn tortilla chips.

Tastes good with:

SALSA

AVOCADO

BEANS

CHEESE

ETC.

You can make some really good nachos!! =D
