I adore Tuna as it is filling and also healthy no butter for some reason I hate any type of butter with baked potatoes I also love a tin of tomatoes poured over them.

In a pan, fry mushrooms and bacon strips in butter, when browned pour over double cream, reduce for a few minutes then add cheese of your choice, I love it with something strong like stilton but you could use cheddar/mozzarella/brie or anything else you like. Season with salt and plenty of pepper and pour over your hot buttered potato (which MUST be cooked in the oven - not in the microwave!)

Butter and lots of mature cheddar cheese. When i was away from home (and no potatoes to be found) i seriously used to dream of it! I actually called my mum international to ask her to make one for me when i got back from the airport!

Ultimate spud:
Scoop out the spud, mash it up and add butter, cheese, chopped bacon and chopped chives and/or black olives. Spoon it back in the skins, top with more cheese and pop back in the oven until golden brown.
Totally top spud!
