Cheese and mayo sandwiches when we were really broke!
The 'feeling rich' meal was pasta with cheese, ham, olives and fresh basil or tuna, cheese, fried onion and broccoli
A baked potato with any of the above fillings
Omelette with red pepper, spring onion and salami
god this takes me back - think I'll try it tonight...

I like the answer that says "Pasta + Pesto was a good cheap one."
Fresh basil, pine nuts, etc -- those things are _not_ cheap.
Unless he means the same sort of student 'pesto' I had, viz: dried basil rubbed onto some pasta with cheap olive oil and cheap supermarket parmesan.
And: home-made lentil soup. 'Pasta salad' slightly lacking in the 'salad' aspect. Bubble & squeak (condiment: lashings of white vinegar). Tins of tomatoes baked with bread crumbs. Anything that'd been bought in bulk from the Costco.

Pasta + Pesto was a good cheap one. Or occasionally just pasta + pasta.
Also a packet of Jacobs Crackers was a good substitute for a meal.

Rice with a knob of butter and a bit of pepper is the ultimate money saver....
Cheesy beans on toast is always good for a treat.
Otherwise, cheap pints of guiness in the union bar kill two birds with one stone!

Ha... this question reminds me to college years.
I used to buy a box of noodles (like 30 in a box). I had one or two for dinner. For lunch, I had fish and chips.

Oh, that would have to be spaghetti bolognaise made with two tins of tuna instead of meat... how very studenty! (That was a long, long time ago, though... thank goodness!)
