This is a delicious and fresh-tasting marinara sauce that benefits from using fresh herbs and balsamic vinegar. Enjoy over pasta or sliced polenta.

INGREDIENTS:

* 1 tsp olive oil
* 2 cloves garlic, minced
* 1 medium onion, finely chopped
* 1 28-ounce can no-salt added chopped tomatoes, undrained
* 2 tbsp balsamic vinegar
* 1/4 cup no-salt-added tomato paste
* 2 tbsp fresh chopped basil
* 2 tbsp fresh chopped oregano
* 2 tbsp fresh chopped parsley
* Freshly ground black pepper

PREPARATION:
Heat oil in a large pan or skillet. Sauté garlic and onions on low heat until softened, about 5 minutes. Add tomatoes, balsamic vinegar and tomato paste. Bring to a boil, then reduce to a simmer. Add chopped herbs and simmer uncovered for 15 minutes.

Makes about 3 cups

My delicious pasta sauce:

2 Tbsp Good-quality olive oil
2 sprigs rosemary
1 sage leaf
1/2 of a red onion
5 cloves garlic
1 liter passata or 1 can tomatoes
8 cherry tomatoes, chopped (optional)
Sugar to taste
Salt to taste
Pepper to taste

Simmer the onion and herbs in the olive oil until the onions are soft
Add the garlic and simmer until the onions are translucent
Add the pasta or canned tomatoes and cherry tomatoes
Simmer to reduce for 15 minutes
Add sugar, salt, and pepper

Serve over fresh pasta and enjoy!

Soften some freshly diced tomatoes in a pan with a generous drizzle of olive oil, a pinch of sugar and salt.
Cook fresh spaghetti
roast thinly sliced strips of yellow pepper
once pasta is cooked and tomatoes are soft stir into the pasta adding a little bit of olive olive to help blend
serve with strips of roasted pepper and fresh basil
Serve with some Reggiano Parmesan

Serve with some red wine

Start with finely diced onions sweated off in olive oil, add chopped garlic. Be careful not to let the garlic burn.
Then you can add:. Finely diced carrot, chopped tomatoes (preferably plum variety), a dash of balsamic vinegar or red wine, some fresh oregano and, just before serving a handful of fresh basil. Grow basil on the windowsill - slugs love it if you try to grow it in the garden.
Or 2: After the onions and garlic add small sprigs of broccoli and sliced, red chilli peppers. Season and add fresh coriander or flat leaf parsley. You'll need more olive oil in this sauce, but it's great.

Try this -
Liquidise tomatoes, add chopped onion and heat through in a pan. Add some herbs, garlic, and cubed Mozerella cheese with some grated parmesan cheese and lightly stir till melted. Add cooked pasta to the sauce then transfer into an oven proof dish. Top with grated cheddar and grill until the cheddar is golden. Serve with crusty bread.

Chicken or vegetable stock cube melted in hot water, add chopped onions, chopped tomatoes, garlic, black pepper, two large pinches of mixed herbs. Simmer for about 15 Min's and add to cooked pasta. Tip: if you like your sauces quite thick add some McDougals thickening granules which are on the market at the moment and can be used for savoury of sweet dishes to thicken them up. You can also add chicken or other meats it you wont to. Sheila.

Fresh roughly chopped tomatoes, sliced onions. Sweat them down in olive oil until you have a thick sauce, add some garlic, basil, tom puree, white wine and slowly add water or veg stock until you have the consistency you want.

+ pasta + ham = Pasta Carbonara

provincal sauce is very simple.

just chop up an onion roughly and fresh tomatoes, sweat them off add some garlic, white wine salt and pepper, bring to the boil and there you go

carbonara:

2 cloves garlic
1 medium onion
10 mushrooms (100g)
3 slices cooked ham
1 tablespoon olive oil
1 tablespoon flour
small carton (150 ml) single creem
1 teaspoon mixed italian herbs
salt n pepper

some tagliatelli (or other pasta if u so wish)

-peel & crush garlic
-peel & slice onion
-slice mushrooms
-slice ham into 1 cm squares

-heat oil in frying pan
-add onions and garlic and cook for a couple of minutes
-add mushrooms and cook for another couple of mins
-add the ham and the flour and stir till all the juices and oil are absorbed
-add the cream, herbs, and salt n pepper
-stir n cook for about another 3 mins
