The best i've had is spinach and gorgonzola.
Wilt some spinach in a pan.(Fresh or frozen is fine )with a crushed garlic clove and a little olive oil.Add 1/2 pint double cream. Crumble in Gorgonzola to taste.Season with salt and black pepper.Easy on the salt as the cheese is quite salty.Done !top with parmesan.Delicious!!!
I forgot you said not to high in fat.Never mind,just go for a run after.

My personal fave is to make a simple brown gravy (I'm a veggie) based on vegetable broth! No added fat works just fine but I usually add a dash of Olive oil and for some added 'flair' a little scalded (to remove alcohol) Bourbon. Really simple and *very* tasty! Hmm, I tend to think a simple tomato-basil sauce is absolutely perfect with gnocchi, but I guess not for you!
Another really lovely one to try is using porcini mushrooms - saute them with a little garlic, onion and rosemary, then add vegetable stock and a bit of reduced fat creme fraiche (cream is nice, but higher in fat, obviously!) If you have any chestnuts available then crumbling in a few of those, roasted, is absolutely delicious.

White wine garlic and herb always goes well with a potatoe base such as gnochhi - the packet shwarts? are very good and try adding bits of chopped wafer thin ham and a few mushrooms - very tasty. Dont forget to add some pepper

Wizz up some galic,chives and corriander add some still white wine white pepper and if you like a bit of bite a pinch of cayenne pepper.Warm up but not to the boil.let it reduce to thicken or add a thickening agent or cornflour. ENJOY

Heat nonstick pan with olive oil, add gnocchi, 2 minced garlic cloves, handfull of chopped parsley or basil and lemon juice and white wine to taste, saute until done, season to taste with salt and pepper

Brown butter and fresh sage. Melt the butter in a pan until it becomes brown and add torn pieces of sage. Add cooked gnocchi to pan and saute for a couple of minutes. YUM!!!

mushroom sauce, white sauce.
i usually make it my self... but having everything white is not so good looking.
i would go for pumpkin or spinach sauce. i would pure the pumpkin or the spinach and add it to the white sauce instead of the mushrooms.
