I've noticed that dogs always run squint: the hips are never in line with the shoulders but are off to one side. Presumably that's so that the back legs don't crash into the front at full tilt.

Question is, do they always squint the same way? I think I've only ever seen (looking from behind) hips to the left, shoulders to the right. I assume that's a "right pawed" dog. Are there "left-pawed" dogs?

I think you are refering to crabbing. Well I kinda disagree that dog always run crabbing. I have never spotted it in a preformance whippet over about 8 months of age. I think this comes in some breeds/line within breeds, because the showring asks for upright carrage in the front legs (looks alert & regal) but a long sweeping slopeing rear assembly so the dog has a longer rear stride than the front and too little back flexability to componsate with back flex (sighthounds rear legs pass the front at one point in their stride)
I cant testify to crabbing but there ARE right and left handed turning dogs that prefer to turn to one side or the other and can turn tighter the prefered way.
