We have a bakery in the next town over from us that has everything from delicious baked goods.......cakes. pies, cookies, pop-overs, creme puffs, coffees, sandwiches and chips to ice cream in very unusual flavors. This place has two locations, close at 8pm and do a booming business.
If I had my own bakery, I think I would specialize in birthday and wedding cakes, but also have a variety of sandwiches and maybe even candy. I would stay open late as I think that is when people get off work and the shop would be the busiest.

Soup and sandwiches would be nice but I would concentrate on the deserts the most. All of the bakery's in my area close at 6:00 PM. They open at 6:00 AM though. A lot of people get donuts and stuff to take to work and coffee of course. They seem to do very well not having soup or sandwiches. Just concentrating on deserts and breads keeps them plenty busy. They are busy enough that it's not worth it for them to offer anything else. Best of Luck!

i work in a bakery that was originally just for pastries , coffee, and bread, and then we started making sandwiches and it got totally out of control. people only come in for the sandwiches now! they hardly buy the pastries, only when we're out of sandwiches! it depends on what style bakery you want though, but be warned people love sandwiches!

i will serve sandwiches and coffee and also soup...
but i will close shortly after people get off work.. wich is stay up for around half an hour and close

I am getting ready to open a bakery and I will only have sweet baked goods. Mine is just a delivery or special order type of thing right now, and will have cakes, cookies, and pies. I don't want to get into anything much more that that at first.

Maybe some bagels too, but dont stay open too late unless its in a good location and you could have a nice coffee shop environment where people socialize. Maybe get wireless internet for people to bring in their laptops.
