I love green-bean casserole, and find myself always making it...is there anything similar?

you put green beans in it you put corn and you put and kinda souce you like to make it soup like and then you put mashed potatoes and cheese over the top its good and you cna make it out of leftovers =]

Creamed Pea's
1- canned or 1 bag frozen peas
1- can cream of broccoli soup, cream of broccoli, cream of mushroom, your choice
1/2- cup milk.
Mix Soup and milk together.
Put peas in a casserole dish mix in soup.
Bake @ 350% for about 15 to 20 minutes. Or Microwave for 5 to 10 minutes. Depending on your microwave.

Vegetable Kabobs with Rice
INGREDIENTS
1/2 cup Italian salad dressing
1 tablespoon minced fresh parsley
1 teaspoon dried basil
2 medium yellow squash, cut into 1 inch pieces
8 small boiling onions, peeled
8 cherry tomatoes
8 medium fresh mushrooms
2 cups hot cooked rice
DIRECTIONS
In a small bowl, combine dressing, parsley and basil. Alternate the vegetables on eight skewers. Place on a gill rack over medium-hot coals. Baste with dressing mixture and turn frequently for 15 minutes or until vegetables are tender. To serve, place 1/2 cup rice on each place and top with two kabobs.
Nutritional Analysis: One serving (prepared with fat-free dressing; rice prepared without added salt) equals 171 calories, trace fat (0 saturated fat), 0 cholesterol, 70 mg sodium, 38 g carbohydrate, 0 fiber, 5 g protein. Diabetic Exchanges: 2 vegetable, 1-1/2 starch

You can make the same thing with any vegetable that you like cooked,or a combination. Also you could experiment with adding a bit of meat or some shredded cheese-it's a simple recipe well suited to adaptation. Have fun!

Here's something a little different than the typical green bean casserole.
Saute a little onion and garlic in butter.
use a can of french cut green beans and drain. you can add to the onion/garlic mixture or you can just dump them in a bowl and pour the onion/garlic mixture over.
Throw in some bread crumbs and parmasean cheese and mix. (i just eyeball everything--you don't want the beans too dry and it is ok to use onion powder and garlic powder). you can microwave it til hot or throw it in the oven.

brown hamburger then mix in cream of mushroom soup and green beans.Layer baking dish with tater-tots then mixture then layer with cheese and repeat put in oven on 350 degrees until tater-tots are done.mmmmmmm

I like spinach dip, but when someone else make it. When I get home and settled in I am planning to get with this older lady and she is going to teach me everything she knows.
