Vitamin E should be first in any effective antioxidant list. It is actually a generic term, which refers to all entities (eight found so far) that exhibit biological activity of the isomer tocopherol (an isomer is one of two or more molecules that have the same chemical formula but different atomic arrangements). Alpha-tocopherol, the most widely available isomer, has the strongest effect on the body. Because it can dissolve only in fats, alpha-tocopherol is in a unique position to safeguard cell membranes from damage by free radicals. Alpha-tocopherol also prevents the fats in ‘bad’ cholesterol from oxidising.

Vitamin C, also known as ascorbic acid, is a water-soluble vitamin. It forms an important part of the antioxidant list because it scavenges free radicals from body fluids, such as those inside your cells. Vitamin C works with vitamin E to destroy free radicals.

Beta-carotene, also a water-soluble vitamin, is the most widely studied of the 600 carotenoids identified to date. It is thought to be the best destroyer of singlet oxygen, which is toxic to cells. Beta-carotene is excellent at scavenging free radicals and cannot be omitted from any comprehensive antioxidant list.

Lycopene is a carotenoid found in tomatoes, and is what gives them their red colour. It is a key member of the antioxidant list because in experiments it has been found to be the most powerful antioxidant of its kind. Studies have shown that including tomatoes in a meal together with oil, can increase your absorption of lycopene by fifty percent.

Polyphenols such as those found in red wine, acai berries, tea, olive oil, fruits and vegetables have antioxidant capabilities. Consumption of these foods has been shown to increase the body’s antioxidant defense system, by increasing the antioxidant capacity of blood. They may therefore have an important role to play in decreasing free radical damage. It is probable that polyphenols will play a more prominent role in this antioxidant list in future.

Selenium is a mineral that we need to consume in only very small quantities, but without which we could not survive. It forms the active site of several antioxidant enzymes including glutathione peroxidase.

Zinc is a mineral that is involved indirectly in antioxidant reaction. It helps prevent damage to cells and is necessary for antioxidant action to take place.

Antioxidant Enzymes such as superoxide dismutase (SOD), catalase (CAT) and glutathione peroxidase (GPx) serve as your primary line of defense in destroying free radicals. Together, they repair oxidized DNA, degrade oxidized protein, and destroy oxidized lipids (fat-like substances that are a constituent of cell membranes). Various other enzymes act as a secondary antioxidant defense mechanism to protect you from further damage.

Other Antioxidants - in addition to enzymes, vitamins, and minerals, there appear to be many other nutrients and compounds that should be on any good antioxidant list. Among them is coenzyme Q10 (CoQ10, or ubiquinone), which is essential to energy production and can also protect the body from destructive free radicals. Uric acid, a product of DNA metabolism, has also become increasingly recognized as an important antioxidant.

Cysteine is a high sulphur containing amino acid synthesized by the liver. It is an important precursor to Glutathione, one of the body's most effective antioxidants. Cysteine is only incorporated into proteins at the rate of 2.
