This is so easy and quick to make and requires very few ingredients. It tastes hot and spicy as tomatoes take in the heat of the chillies very well. Even though the following recipe calls for certain ingredients available only in the Indian grocery stores it can be made even without them and it tastes just as good.
Ingredients: (*means available in Indian grocery stores)
Tomatoes any kind 5 to 6 thinly sliced lengthwise
Onion 1 big one thinly sliced lengthwise
Salt 2 teaspoons or to taste
Cayenne pepper powder or red chilli powder 1 teaspoon
Green chillies 2 to 3 thinly sliced
*Garam Masala powder 1 teaspoon (its an all spice blend)
*Turmeric powder a pinch ( for color)
Vegetable oil 2 tablespoons
How to prepare:
Heat oil in a pan.
Add onions and green chillies and fry till transparent or sweaty.
Add tomatoes, Cayenne pepper powder, masala powder and turmeric.
Fry once and keep covered and cook till the tomato is cooked and the onions and the tomato come together.
Now add the salt and cook a little bit more.
A little water can be added now and then during the cooking process so that the gravy does not stick to the pan and comes together nicely.
Note:
This dish goes very well with tortillas and plain white rice (basmati or regular). It serves as a good side dish.

Tomato Onion Gravy
1/4 cup chopped onion (optional)
3 tablespoons bacon drippings
1 tablespoon flour
3 or 4 tomatoes, peeled and chopped
1 cup water
Salt and pepper, to taste
Sauté onion in bacon fat. Stir in flour and brown. Add tomatoes along with their juice; stir as gravy thickens. Add water, a little at a time, and cook until gravy is of desired thickness. Salt and pepper to taste.
Makes 2 to 2 1/2 cups.

Tomato gravy
Ingredients
1 tablespoon butter
1 cup chopped mushrooms
1/2 cup finely chopped onions
2 cups chopped peeled tomatoes
1/4 teaspoon salt
1/4 teaspoon black pepper
Preparation
Melt butter in a medium nonstick saucepan over medium heat.
Add mushrooms and onion, and cook 4 minutes or until tender, stirring frequently.
Add chopped red tomato.
Bring to a boil, and cook for 10 minutes or until liquid almost evaporates.
Stir in 1/4 teaspoon salt and 1/4 teaspoon pepper.

My mother learned how to make gravy from my Granny. I have changed some of the ingredients such as lard and salt back pork, instead I use oil. Heat a medium size skillet add enough oil to just cover the bottom. Cut up 2 onions however you like I cut mine in rounds and then fry until medium brown. Remove from skillet and add 1/4 cup of flour salt and pepper cook until lightly browned add water or milk ( which ever you prefer ) stir to keep lumps from forming then add onions. Let simmer until it is the desired thickness.
To make tomato gravy you will need a medium size skillet heated add oil to barely cover the bottom and then add flour salt and pepper. When it is lightly browned add a medium sized can of tomatoes or 4 tomatoes chopped and water or milk ( which ever you prefer ) stirring to remove lumps. Let simmer until it reaches the desired thickness. These are tried and true recipes handed down to me from my Gran, they are both very good with biscuits, bread, rolls, grits, rice and mashed potatoes.

fairly spiced Egg Curry components 4 boiled eggs 2 medium sized onions a million Tomato 3 green chilli's 2 tsp. coriander powder 5 cloves of garlic a million" ginger a million tsp. jeera a million/2 tsp. garam masala pinch of turmeric powder 3 tbsp oil, Salt to flavor, water technique: Make a paste of a million onion, garlic, ginger and green chilli's. In a pan upload oil while heated upload jeera, while it splutters upload the the rest onion (slit lengthwise) save frying until eventually it somewhat is golden brown then and finely chopped tomato fry it somewhat is smashed precise then upload the floor paste, upload turmeric powder, coriander powder and salt. save frying until eventually you notice the oil seperating on the precise and there is not any uncooked scent. upload water if the curry sticks on the backside of the pan.ultimately upload the boiled eggs (make vertical slits on the aspects of the egg). Toss the eggs into the curry and enable it simmer for 2 minutes,sprinkle garam masala and do away with from warmth while the curry is thick in consistency.

Saute onions in hot oil or pan drippings (from bacon or pork chops), add flour, salt & pepper to make a roux. When flour is a little brown, add canned tomatoes and simmer, stirring to blend until thickened.

If u really want a simple n vegetarian gravy then u can go for this.In a pan,add oil,add mustard seeds and curry leaves and saute onions until golden brown and then add in the chopped tomatoes.Add 1spoon of each red chilli powder,coriander powder,fenugreek powder,pinch of turmeric powder and salt.Add 1glass water and mix well.close lid n leave it to cook on sim for 15min.Ur gravy is ready.Its very simple and tasty too.Enjoy!
