I agree with you! I used to get so annoyed when I was at school and a teacher would want me to call them Sir. Because, unless they have been knighted by the Queen - I will be calling them Mr!

It also annoys me when people call women Madam - sorry, but to me a Madam is a person that runs a brothel!

My honest guess is because once there were so many knights around (not that its a bad thing) and usually the only well paid people were Sir's or Lady's. I suppose it just became customary to great somebody as Sir (unless they were clearly Noble) that it got "stuck" as society grew and learned more manners. It was better to accidently call someone Sir than to accidently NOT address them properly.

Well how is it clear to the shop server that you aren't a sir, theres no lable you know. So to be safe they call you sir in case you are.
