It's just a polite thing. In the old days people would see a sneeze as a sign on approaching illness. To ask god to bless that person would mean to keep them from becoming ill.

People say God bless you if someone sneeze because sneezing is a sign or symptom or indication that someone will have an illness such as influenza or a fever,We say God bless you as a pray that may God avoids you from such illness.If we are ill ,we consult to a doctor and eat medicine but in reality only God will healing us.The docror and medicine are only the mediator and its tool.The omni healer is our God Almighty ,Allah the only one God.If Allah does not bless us and does not permit us to be healthy we can consult to many doctors and eat various medicines but its sickness is still with us.

There are 2 theories:1) A long time ago in Europe was a epidemic and a lot of people died when they sneeze. 2) When you sneeze it supposed that your hear stops for quarter of second(or less time) and remember that if your heart stops to beat u can die.

Well the story I heard was: when you sneeze your soul is in danger of leaving the body and the devil is just there waiting to grab it.... so if someone says God Bless you .. it protects your soul and the devil doesn't get it. Too bad if there isn't anyone there to bless you.... I always play safe and bless myself.

I've heard (as ppl have also mentioned above) that your heart skips for a millisecond or so, thats why, search it up its a medical fact. I read it in the NewScientist magazine.

i think it's this superstition like the dirt from when you sneeze are like the bad spirits.. so religious stuff..
