Vegetable Manchurian

Preparation Time : 30 minutes
Cooking Time : 40 minutes.
Serves / Makes : 6

Ingredients
for the manchurians:
potatoes boiled pealed and mashed 500 g.
cabbage finely shredded 3/4 cup.
carrrots grated 1/2 cup.
maida 3 tbsp.
oil to deep fry.
salt and pepper to taste.

for the gravy:
3 large onions made into a paste in a mixer.
2 large tomatoes made inot a paste in a mixer.
soya sauce 3 tbsp.
chilli sauce 3 tbsp.
vinegar 2 tbsp.
tomato ketchup 1/2 cup.
cabbage finely shredded 1/4 cup.
one medium sized onion cut into 4 and leaves separted.
4 - 5 green chillis cut lengthwise.
ajinomoto 2 tbsp.
salt and pepper to tast.
oil as required.
water 2-1/2 cups.


Method
recipe:
manchurians:
1. mix all the ingredients to form a dough.
2. shape the dough into cutlets by hand.
3. heat oil in kadahi.
4. fry the cutlets and keep aside.

gravy:
1. heat oil in kadahi.
2. fry onion paste till golden brown.
3. add tomato paste.
4. fry till the paste starts leaving kadahi.
5. add 2-1/2 cup water.
6. add soya sauce, chilli sauce, vinegar, ajinomoto, ketchup, salt and pepper.
7. add shredded cabbage, separated leaves of onion, and chillis.
8. cook for 15 to 20 minutes.

add hot gravy to the cutlets just before serving.

1. add gravy to the munchurians just before serving or else they will get mushy.
2. you may adjust the quantity of sauces according to taste.
3. manchurians may be served with either fried rice or as a plain snack with tea.

Vegetable manchurian

Ingredients

2 cups Grated Cabbage
2 cups Grated Carrots
1 Chopped Spring Onion
2 Chopped Green Chilies
3-4 Crushed Garlic Flakes
2 tbsp Corn Starch or Flour
Oil for deep frying
1 tbsp Soya Sauce
Salt to taste
1 tsp Pepper Powder
1 tsp Sugar
A pinch of ajinomoto
2 tbsp oil


Preparation of vegetarian manchurian :

Mix grated cabbage and carrots and squeeze the water out from them.
Now in a bowl take the squeezed cabbage and carrots and mix 1 tbsp. corn starch and add few chopped chilies and little salt to it.
Make small balls (like koftas) of the mixture .
Heat the oil in a kadhai / wok and deep fry the balls till golden brown, drain and keep aside.
Now in a separate pan heat 2 tbsp oil.
Sauté garlic, green chilies and spring onions.
Add water, salt, pepper powder, ajinomoto, sugar and soya sauce. Bring it to a boil.
Mix 1 tbsp corn four with half of a cup of cold water and stir into it. Gently add the fried balls to the gravy.
Cook the vegetable manchurian for 3-4 minutes and serve hot garnished with chopped coriander.

For Manchurian Balls:

1 cup grated Cabbage
1 big Carrot- grated
2 finely chopped Green Chillies
3 tbsp Cornflour
1 tbsp Maida
1/4 tsp Salt
1/2 tsp Pepper powder
Regular Oil for frying

For Manchurian gravy:

1 tbsp Sesame Oil
1" piece Ginger - crushed
5-6 flakes Garlic - curshed
2 Green Chillies, chopped
1/2 Onion finely chopped
1 tbsp Soya Sauce
1 1/2 tbsp Tomato ketchup
2 tsp Vinegar
1/2 tsp Salt
1/4 tsp Pepper
1 1/2 tbsp Cornflour

Method: Add 1 pinch salt to cabbage. Keep aside for 15 minutes, Squeeze well to remove out all the water. Mix all the other ingredients of the balls.(if no problem u can also add i egg-white for better taste to this mixture) . More flour may be added if mixture does not bind together. Make balls. Flatten each ball.
Roll in flourand shallow fry 2-3 pieces at a time on medium flame. Keep the balls aside.

To prepare sauce, heat 1 1/2 tbsp oil, Add ginger & garlic. Fry on low flame for 1 minute. Add green chillies and onions. Cook for one minute. Reduce heat and add soya sauce, tomoto sauce, vinegar, salt and pepper. Cook for 2-3 minutes.
Add 1 1/2 cups of water. Boil. Keep on slow fire for 2 minutes.
Dissolve cornflour in 1/2 cup water. Add corn flour strring continuously, cook till slightly thick.
Add the balls to the manchurian sauce and keep on slow fire for one minute.
Serve hot with Rice.

Gobi Manchurian

Ingredients

1 md cauliflower clean and broken into florettes.
1 sm spring onoin finely chopped
2 ts ginger finely chopped
1 ts garlic finely chopped
1/4 c plain flour
3 tb cornflour
1/4 ts red chilli powder
2 red chillies; dry
3 tb oil
1 1/2 c water
1 tb milk

Instructions

Boil the florettes for 3-4 minutes in plenty of water, to which a
tablespoon of milk has been added. Drain and pat dry on a clean cloth.
Make thin batter out of flour and 2 tablespooncornflour, adding 1/4 teaspoon each of ginger and garlic and red chilli powder and salt to taste.
Dip the florettes in the batter one by one and deep fry in hot oil. Keep aside.
In the remaining oil, add remaining ginger, garlic and crushed red chilli and fry for a minute. Add the salt and spring onions.
Stir fry for a minute. Add 1 1/2 cups water and bring to a boil.
Add 1 tablespoon cornflour to 1/4 cup water and dissolve well.
Gradually add to the gravy and stir continuously till it resumes boiling. Boil till the gravy becomes transparent. Add florettes and soya sauce. Boil for two more minutes and remove. Serve hot with noodles or rice.

Variations:
Dry manchurian can be made by omitting the gravy.
Make florettes as above and instead of adding water as above, add fried florettes, spring onions and soya sauce at this stage.
Sprinkle 1 teaspoon cornflour on the florettes and stirfry for 2 minutes.
Serve piping hot with toothpicks or miniforks and chilligarlic sauce or tomato sauce.
Same procedure for veg. manchurian (with gravy or dry), but instead of using only cauliflower, use finely chopped minced vegetables and bind with some cornflour or bread crumbs and make small lumps the size of a pingpong ball.
Fry as above and proceed as above.

the exat word is manchurian.first you have to deep fry the vegetable.after that make a thick greavy with garlic,tomato sauce,capsico sauce.then mix the fried vagetable in that greavy.your manchurian is ready.

Sauté garlic, green chilies and spring onions. upload water, salt, pepper powder, ajinomoto, sugar and soya sauce. carry it to a boil. combination a million tbsp corn 4 with 0.5 of a cup of chilly water and stir into it. gently upload the fried balls to the gravy. prepare dinner the vegetable manchurian for 3-4 minutes and serve warm garnished with chopped coriander.
