Every year I make these pastry cookies and i put the Comstock Almond Pie filling on the top. They are really great, but every year it is getting harder and harder to find the pie filling I need. I got on their website and it appears they don't make that flavor any more so now i have to find out how to make it myself. Please someone help! My holidays just won't be the same with out these pastries!

I don't know how but you can try www.allrecipes.com they usually have all sorts of stuff there. I find the best things at that site.

Wow, this is a tuffy. That lavor is definantly discontinued. I never used it, so I don't know how close these recipes are.
Hope you can use them!

Almond Custard Filling
1/2 cup nonfat dry milk powder
2 tablespoons cornstarch
3/4 cup white sugar
1 1/2 cups water
4 egg yolks, beaten
1 teaspoon almond extract
DIRECTIONS
Mix nonfat dry milk, cornstarch, and sugar together in a medium sized saucepan. Stir in a mixture of water and egg yolks gradually, until smooth. Cook and stir over medium heat until thick and smooth. Continue to cook while stirring over low heat for one minute longer. Remove from heat and stir in almond extract. Allow custard to cool before using

ALMOND CHIFFON PIE FILLING
1 1/2 c. milk
1 pkg. Knox gelatin
1/4 c. sugar
2 eggs
1 tsp. almond extract
3 tbsp. sugar
1 tsp. vanilla
Cool Whip
Almonds

Mix milk, Knox gelatin, and sugar. Heat until bubbles around edges. Add 2 egg yolks (beaten). Mix fast and well. Do not boil. Add almond extract. Remove and cool until thickens in refrigerator (approximately 30-40 minutes). Beat egg whites until frothy. Add sugar and vanilla. Beat until stand up. Add Cool Whip and fold in cooled filling. Pour in ready baked crust. Scatter almond slivers on top. Add Cool Whip for decoration. Cool in refrigerator until cutting consistency (approximately 1 hour).
