yes, you can; that's why they put them in the food aisle in grocery stores pre-washed and packaged there.
Vitamin A - http://ods.od.nih.gov/factsheets/vitamina.asp#h1 (it does a good job of explaining...) another good site is: www.medterms.com/script/main/art.asp?articlekey=8661
if you don't understand those sites, just go to: http://en.wikipedia.org/wiki/Vitamin
Hope this helps!

Of course you can. Wash them well first. Do not scrape them. Cut them into small slices for salads. Good baby carrots are lightly crunchy and O so healthfully delicious. Enjoy.
Vitamin A that is found in colorful fruits and vegetables such as carrots is called provitamin A carotenoid which is a carotene. Carotene generally is an antioxident which is very healthy for you. So much more can be said about it.

Yea you totally can. Always be careful and wash it. You don't know what they did to those bagged ones. It's awesome with ranch dressing too. Vitamin A is a vitamin which plays essential roles in vision, growth, and development; the development and maintenance of healthy skin, hair, and mucous membranes; immune functions; and reproduction.

Yes, and they are better for you that way! Cooking them removes some of the vitamin c and potassium (but they are still really good for you then too!)
