a carbon dioxide probe measures the carbon dioxide content in the atmosphere. for an assignment, i need to find some information, but i cannot seem to find much relevant information on the probe.

Carbon dioxide has really strong absorption band in the ir (infrared) - that's why its a greehouse gas. So you shine a beam of ir light through a known path length, and see how much is absorbed, allowing you to calculate the carbon dioxide in the air.

There are many types of CO2 sensors, and the link below discusses the theory of one type, MEMS, or Micro Electro Mechanical Systems.

As described in the document, CO2 is an inert gas, and difficult to measure chemically. The device described uses IR spectroscopy.
