If I nuke or fry or roast them -- got a suggestion for what to do with the run-off mushroom juice...?

I tried nuking them (alone, no butter). This worked quite well, though it does take some fussing with the time. The liquid ran out and they shrunk in no time.
Roasting is an excellent idea too, but I have yet to try it -- will try to note the results here when I do...

I always microwave the mushrooms for a couple minutes in a covered bowl, either alone or with a tbsp of butter, but if you're against microwave, just cook them in a frying pan for a couple minutes. You still get great flavor because the mushrooms are fresh but they lose the extra water when you microwave them.

Roast or grill the mushrooms first. This will remove some of their water while enhancing their flavour.
Edit: You can always add the run off liquid from them into the pizza sauce. Roast or grill the mushrooms before you start preparing the pizza. Put any liquid into the sauce you plan to use and mix it in. There won't be much, so you won't be thinning out the sauce much. Alternately, you could always heat the sauce with the liquid in it before putting it on the pizza, thus evaporating some of the liquid and thicken it back up some, but now with a little of the mushroom flavour in it.

Two different ways of doing this, first take canes of mushrooms with a little salt.The salt will help absorb some of the water Then wrap it up by using paper towels, let sit for about 15 minutes, that should get rid of allot of the water. The second idea is for you to use fresh mushrooms, the reason why is because thy don't sit in water.

Lightly sautee the mushrooms in olive oil first after washing and drying them in paper towels. You can also buy a mushroom brush to clean them instead of washing them.
I saute the mushrooms with garlic and a little salt. Take the mushrooms out of the pan and lay them on paper towels to remove excess oil.
Then place them on your pizza. Do not overcook the mushrooms or else they will become too well cooked in the oven. Scrumptious. Enjoy. Good Luck.

Fry your mushrooms up before you put them on the pizza. Then put them on a paper towel and let them sit, pat them a little before you put them on the pizza. This should render alot of the water in your mushrooms out, which is what is happening as your pizza cooks, making the pizza soggy.
This is also a good idea when putting spinach or any other water-heavy veggie on your pizza.

Are you washing those little sponges in water before you slice and put them on your Zaa? Buy a Mushroom brush and all your worries will disappear along with a perfect Zaa with lots of shrooms

cook it longer at a higher temperature, i always add heaps of mushrooms and other sogy stuff on my pizzas and never soggy
