Because when the universe formed, there were lots of hydrogen atoms all over, and they were bored, so they got together and decided to form giant hot balls and fuse together into larger atoms like helium and carbon.
(Technically the gravity of large clouds of hydrogen collapsed them into a high pressure situation and caused them to undergo fusion, but the hydrogen convention idea was more fun.)

There are many galaxies full of stars; each of those galaxies (includid ours) could potentially be loaded with worlds containing life. We just don't have the technology to know for sure yet.
