Fudge Rum Balls (Non-Alcoholic)
List of Ingredients
1 pkg deluxe butter fudge cake mix (Duncan Hines)
1 cup finely chopped pecans or walnuts
1 Tbsp rum extract
2 cups sifted confectioners sugar
1/4 cup unsweetened cocoa
Recipe
Preheat oven to 375 degrees.
Grease and flour 13x9x2 inch pan.
Prepare, and bake the cake following package directions. Cool. Crumble cake into large bowl. Stir with fork to break up into fine crumbs. Add 1 cup nuts, rum extract, sugar, and cocoa. Stir until well blended. Shape heaping tablespoonfuls mixture into balls. Garnish by rolling balls into finely ground nuts or chocolate sprinkles, or just leave plain.
NOTE: You may substitute REAL RUM for the extract if desired.

Coconut Rum Balls
Makes: 40 balls
1 cup (2 sticks) unsalted butter, softened
1/2 cup packed light-brown sugar
2 egg yolks
1 teaspoon rum extract
1/2 teaspoon salt
2 cups all-purpose flour
2 2/3 to 3 cups sweetened flake coconut
Directions:
Heat oven to 350°.
Coat 2 large baking sheets with nonstick cooking spray.
In medium-size bowl, beat butter, brown sugar, egg yolks, rum extract and salt on medium speed until creamy and smooth, about 2 minutes. On low speed, gradually beat in flour just until blended and soft dough forms.
Spread coconut onto a plate. Drop 1 level tablespoon dough at a time onto plate; roll to evenly coat with coconut, forming balls. Place 1 inch apart onto prepared baking sheets.
Bake in 350° oven 18 minutes or until coconut is golden. Transfer cookies to wire rack; let cool completely.

In a medium bowl, mix vanilla wafer crumbs, ground pecans, cocoa, 1 cup confectioners' sugar, corn syrup, water, and rum flavoring together.
Roll mixture into 1 inch balls, and then roll in remaining confectioners' sugar. Store, covered, about a week before serving.

Krispy Kreme Bread Pudding With Butter Rum Sauce
Just when you thought you could'nt top a Krispy Kreme, make this recipe and you will have the answer! This delicious downright sinful dessert is for all the sweet tooths out there. You can also add coconut and chopped cherries with a scoop of vanilla ice cream....YUM!
Prep Time: 10 minutes
Cook Time: 1 hour
Makes: About 12 Servings
2 dozen Krispy Kreme donuts or donuts of your choice
1 (14-ounce) can sweetened condensed milk (not evaporated)
2 (4.5-ounce) cans fruit cocktail (undrained)
2 eggs, beaten
1 (9-ounce) box raisins
1 pinch salt
1 or 2 teaspoons ground cinnamon
Butter Rum Sauce, recipe follows
Preheat oven to 350 degrees F.
Cube donuts into a large bowl. Pour other ingredients on top of donuts and let soak for a few minutes. Mix all ingredients together until donuts have soaked up the liquid as much as possible.
Bake for about 1 hour until center has jelled. Top with Butter Rum Sauce.
Butter Rum Sauce:
1 stick butter
1 pound box confectioners' sugar
Rum, to taste
Melt butter and slowly stir in confectioners' sugar. Add rum and heat until bubbly. Pour over each serving of Krispy Kreme Bread Pudding.

Cherry No Bake Rum Balls
Ingredients
2 1/2 lb Vanilla Wafer Crumbs
2 c Powdered Sugar
2 c Nuts, Finely Chopped
2 c Coconut
1/2 c Light Corn Syrup
1 c Dark Sweet Cherries, Well Drained And Chopped
1 c Dark Rum (or 1 1/2 Tbls Rum Extract) <<<<<<<<<
Instructions
Yield: 100 to 125 Rum Balls
Thoroughly mix all of the ingredients, except the powdered sugar, together, blending well. Shape into 1-inch balls and roll in the powdered sugar.

250 g arrowroot biscuits crushed
395 g condensed milk
1 cup coconut
1/4 cup cocoa
1 1/2 tbs rum
1 cup coconut
Method
STEP 1 Combine all ingredients.
STEP 2 Wet hands and roll mixture into small balls then coat in coconut.
STEP 3 Refrigerate or freeze for later.
