Cheese - and anything else will dehydrate in the fridge, that's why it gets hard. Wrap it tightly in plastic wrap or seal in plastic container, maybe even a ziploc bag. You can also spread butter or margarine on it to keep it from drying out.

In all cheeses there is some form of moisture content. If the cheese is not properly stored/wrapped up then the moisture will disappear and the cheese will dry up.

well, if you actually take the time to read cheese, it says on it, best if used within 5 days after opening, and that is the same with juicy juice, you can only drink that within 5 days after opening, and cream cheese, you can only use with in 10 days after opening, all of these things surprised me when i started reading labels, its funny the things i learned that i didnt know.

If you leave it unwrapped it gets dehydrated, that is why it gets hard.
If you wrap it up, while it is still fresh, in a plastic bag, it will keep soft.
