Ambrosia Stuffed Sweet Potatoes

3 x Sweet potato
9 tbl Light sour cream
6 tbl Marshmallow cream
3 tbl Sweetened flaked coconut
3 tbl Chopped pecans
12 tsp Drained, crushed pineapple
12 x Dried apricot halves, chopped

Preheat oven to 400 degrees F. Wash the sweet potato, pat dry and pierce in several places with a fork. Bake for 45 to 50 minutes. Let cool slightly.
Combine the remaining ingredients in a bowl - blend well. Working lengthwise, clice sweet potato in half. Use a spoon to scoopout all but 1/4" of flesh from each half. Place the scooped out potato in a bowl, mash lightly with a fork - add about 1/2 of the ambrosia mixture to the mashed sweet potato - blend well. Spoon this mixture bak into the potato skins and top each with the remaining ambrosia.


Heavenly Holiday Sweet Potatoes

1 1/4 lb Sweet potatoes, peeled and chopped
2 cup Raisins (optional)
1/4 cup Dark rum
5 x Eggs, slightly beaten
1/2 cup Sugar
1 qt Whipping cream,
2 cup Half and half
2 tbl Cane syrup or molasses
1 tbl Cinnamon,
1/2 loaf french bread, torn into pieces
RAISIN SAUCE
1 1/2 cup Butter
1/4 cup Dark rum
3 cup Powdered sugar
1 x Egg yolk


Steam sweet potatoes and set aside. Soak raisins in rum. Mix eggs and next 5 ingredients; add bread pieces, sweet potatoes and raisins (toss in the unabsorbed rum too!) Bake in TWO 11 x 7 x 1 1/2 dishes at 350 for one hour or until set. Serve with Rum Sauce and enjoy!
Rum Sauce: Melt butter, stir in rum; add powdered sugar, wisk until smooth; stir in egg yolk; cook 5 minutes and serve warm.

sweet potatoe and apple casserole

1 cup sugar
3 tbs. cornstarch
1 1/4 cups water
1 tsp. salt
1/2 cup butter
5 apples, peeled, cored, and each cut into 6 wedges
4-5 sweet potatoes, parboiled, peeled, and sliced
cinnamon

In a saucepan combine the sugar, cornstarch, water, salt, and butter. Cook until thickened. Layer the apples and potatoes in a 9x13- inch baking dish, sprinkle cinnamon between the layers. Pour the sauce over the casserole. Bake in a 350* oven for 1 hour. Serves 10-12

I prefer to bake them and then just add butter, nothing else.

1 1/2 cups peeled and cubed sweet potatoes
2 cups all purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
6 egg whites, at room temperature
1 cup milk
1/4 cup firmly packed light brown sugar
1/4 cup butter, melted
1 tablespoon grated orange rind
Vegetable spray, for waffle iron
Special equipment: steamer basket and waffle iron


Put cubed sweet potatoes in a steamer basket. Place the basket in a large pot of simmering water that is no closer than 2 inches from the bottom of steamer. Allow potatoes to steam for 20 minutes of until fork tender. Mash cooked potatoes and set aside.
In a large bowl, whisk together flour, baking powder, and salt and set aside.

In another bowl combine the sweet potatoes, milk, brown sugar, butter, and grated orange rind. Stir the sweet potato mixture into the flour mixture and thoroughly combine. Beat egg whites until stiff peaks form. Gradually fold egg whites into batter 1/3 at a time. The batter will be thick. Using a No. 20 disher (scoop), place 2 scoops of batter onto a preheated, oiled waffle iron, and cook until lightly browned, about 5 to 6 minutes.

"Praline Sweet Potatoes" - 2 servings

1 cup mashed sweet potatoes
2 tbsp. milk
1 egg yolk
1/4 tsp. salt
Dash pepper
1/4 cup packed brown sugar
2 tbsp. butter; melted
2 tbsp. corn syrup
2 tbsp. chopped pecans

In a small mixing bowl, combine sweet potatoes, milk, egg yolk, salt and pepper. Transfer to a greased shallow 2-cup baking dish.
In a small microwave-safe bowl, combine brown sugar, butter and corn syrup until blended; cover and microwave on HIGH for 1 minute or until sugar is dissolved. Spoon over sweet potatoes; sprinkle with pecans. Bake, uncovered, at 350* for 20-22 minutes or until a knife comes out clean.


"Sweet Potato Apple Casserole" - 6 servings

1 1/2 lbs. sweet potatoes
3 apples; cored and sliced
3/4 cup orange juice
1/2 cup cinnamon
1/4 tsp. EACH allspice and nutmeg
2 tbsp. brown sugar
1/2 cup nuts; chopped

In a medium saucepan, cook unpeeled potatoes in boiling water for about 20 minutes or until tender; drain.
Meanwhile, in a medium skillet, heat apples and orange juice with spices. Cover and cook until apples soften, about 3-5 minutes.
Peel sweet potatoes and slice. Place in casserole dish alternating apples and sliced potatoes. Sprinkle with brown sugar and nuts.
Microwave on HIGH for 4-5 minutes.

You can make them very easily by buying the canned yams and adding a couple of tablespoons of brown sugar and about one teaspoon cinnamon maybe a little nutmeg if you like. top the whole thing with marshmallows and bake it until the marshmallows are brown

That's how my mom always did it.

I think the other recipes posted look like the real winners!

Sweet desert...

Peel and cut the potatos into bite size pieces. Boil in one cup milk and 1/2 cup condensed milk until soft and thick. Yummy!!!
