CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream
Heat oil and butter in skillet. Add chicken to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Stir in sour cream. Serve sauce over chicken.

"Garlic-Mushroom Rib Eyes" - 4 servings
4 boneless rib eye steaks; 1" thick
1/4 tsp. pepper
1/8 tsp. salt
4 tbsp. butter; divided
4-8 garlic cloves; peeled and sliced
1 lb. sliced fresh mushrooms
3 tbsp. beef broth
Sprinkle steaks with pepper and salt. In a large skillet, melt 1 tbsp. butter. Cook the steaks for 2 minutes on each side or until meat reaches desired doneness. Remove and keep warm.
In the same skillet, cook the garlic in 1 tbsp. butter for 2 minutes. Remove garlic and set aside. Add mushrooms and remaining butter to skillet; saute for 5 minutes. Stir in the broth; bring to a boil. Cook and stir over high heat until liquid is absorbed. Add reserved garlic; serve over steaks.

cut up a small onion, a green pepper and a tomato
saute the ingredients in butter until the onion is limp
remove the veggies from the frying pan-place in a small bowl
break two eggs in another bowl,scramble and add 1 ounce of milk
pour the mixture of egg/milk in the hot pan - when the eggs set up add two slices of cheese when the chhese melts ,add the veggies
flip the eggs over in half- you have an omelet
